Blessings Ria, not sure if you'll see this comment but thank you so much for your channel! I'm British Jamaican (29yrs old) and have been really enjoying cooking your recipes. So far I have made your Trini curried shrimp, stewed black eye peas, stewed lentils and geera chicken which I made using a vegetarian chicken alternative. All absolutely delicious! I’ve learned there are some interesting differences and sometimes similarities between Trini and Jamaican recipes! Loving your chilled but clear manner of presenting too🙏🏽😊

As usual a work of art. Your cou cou is certainly not our Grandma's cou cou. If it was made with your technique back then, I would probably have tried it in my youth and not just as an adult. You really make food look and taste good 👍.

Hi Ria! Why flour to wash the fish? What does the flour do? P.S. I LOVE coucou. Almost every trinibagonian recipe I found called for shredded carrots, but I don't remember my grandmother/mother making it with carrots 🤔 ... That part of my childhood is a blur 🤣. I'm glad you didn't use any. Will definitely try your recipe

Flour cleans and removes any freshness. I don’t recall carrots either. Maybe that’s a more recent addition. Many of my recipes are as close to traditional as I can get them.

Yes you can instead of using browning you can burn the sugar also.Some ppl make stew fish different.

Thanks. You have to 1. wash until the water runs clear and 2. don’t add too much water, 3. cook for only 15-20 mins in a tightly covered pot. 4. Do not stir after it comes to a boil.

Hi Rita… I just made the stewed fish but I don’t understand why my King fish is “hard” not at all “flaky and soft “. I only cooked it for 5 minutes as the slices were thin ( 1/2 inch). Please help!

Sounds like it needed more cooking and or liquid to cook in. Needs to simmer.
