I used to have a field to table book that covered hunting methods and field dressing for birds and big game and had recipes for making Venison breakfast sausage and the main ingredients were ginger,sage,salt,pepper and bacon ground into the Venison and it was really good

I live about 25 miles north of Brainerd and will be making this recipe very soon. All of those ingredients seem perfect. I'm going to just do the patties though. I put about 1/3# in a Ziplock sandwich bag and smash it to flat to about 1/2" thick in the bag, and shape them. Freeze them that way so they are ready to fry. They stack great in the freezer too!

I sprinkle my seasonings over my chunked meat before grinding it sure helps to mix and spread the seasoning. And then run it back through grinder with coarse plate like advised. Works great with straight pork or a pork and other meat mixture.
