Now I know what I'm going to do with the leftover ribeye from supper. I've seldom seen cooks put salt in the water and not in the flour, but it makes eminent sense. We just got a 25# bag of organic specialty flour with 14.4% protein so I am testing it with all kinds of "breads". I probably wouldn't use it for tortillas except for this experiment. Thanks Ethan!

_ David _ Yes, thats the eternal debate between the north and the south of Mexico. Quesadilla or Questacos in the north imply with Queso (cheese). In Mexico City for example, you have to order a quesadilla with queso if you want cheese.

As a true Mexicano. Ima say right now (granted I am drunk at the time of watching this) this Is as close is is reasonable achievable at home as a person just trying to get the supplies at home. In the US. I Will say. Oregano is a necessity as far as I can tell but otherwise have fun and experiment with it. Cooking is never going to be about where the idea comes from (though recognition is always appreciated) it's about the art of exploration

Can you share some recipes for Chicken Quesadillas? I've looked for interesting recipes online, but most of them have very little variations. Currently I make mine with onions and green peppers, store bought fajita seasoning, powdered cumin and ginger, chicken breast and shredded Mexican cheese mix, honey and crispy bacon. I top it off with Kroger brand Sriracha ranch dipping sauce / dressing (It's the best version of Taco Bell's creamy jalapeno sauce I've found so far). What do you think about adding in black olives?

This is a great video. I have already tried your flour tortilla and it came out awesome. I am interested to know where you bought that griddle. I have a standard reversible type that is from Alldi - works great on my BBQ but the problem is that grease builds up quickly when making, for example smash burgers. Yours has that reservoir to catch the grease which is what I need.

One little tip....cooking the meat in a wok would be soooo much better. Also, if you cook the meat ahead of time, and let it reabsorb the juices, not only will it be more tasty, but the quesadilla wont be as runny either.

Its easier to achieve finer cuts if the steak is slightly frozen (cold enough to still be malleable but certainly not solid). Granted it depends on the steak you’re using but it should take 10 min or so
