Yes, it is honey. You don't need to add the honey just make it fresh.

You should nave allowed your pineapple to ripen because it looks very nasty and unsweet. Anyone making this please get a ripe pineapple or wait until the pineapple has ripen in order to get all the antitoxin benefits from the fruit.
