Coorg Jackfruit seed chutney - Chekke Kuru Pajji
Jackfruit seeds, freshly grated coconut, 1 onion ( optional), 5 - 7 chillies, mustard, curry leaves 🍃, oil
Peel the skin & then boil the jackfruit seeds , scrape the inner skin lightly, grind it with coconut, green chillies, salt to taste, 1 or 2 slices of onion grind it into fine paste.
For tempering heat a spoon of oil, add in mustard seeds, curry leaves, add in few 2-3 onion slices (Optional), saute well until the onion becomes transluent, then add it to grinded chutney and mix well , add little water to adjust the chutney consistency and salt if required.
Then, keep it on gas stove & simmer for a few minutes. Once done, take off from gas stove. If you wish, while serving, squeeze in a wedge of lemon & honey 🍯
