Oh no, yet another poor soul who believes in the "stop at the white part" myth. Don't stop at the white part. In fact, blend the entire damn lemon, seeds and all. It will be bitter, yes, but it will be the good kind of bitter, like an IPA. It'll get balanced by the sourness from the juice, sweetness from sugar, and richness from fat. Not only it's delicious, it's also really quick and speeds up baking lemon flavored things considerably. Try it out yourself.
