I made this, verbatim, and it tastes like spicy ketchup or bbq sauce. Pretty good, either way, but very tomatoey and really doesn't taste much like Diablo sauce, in my opinion. Pretty damn good on a burger though. But I'm really looking for a true Diablo copy cat and will keep looking.

OK, quick question. When I eat this sauce in the packets, it has a lime juice aftertaste, yet you added no lime juice. What gives? Also, I LOVE this sauce & lime juice, & Hellthy Junkfood....

It has lime flavor, for sure. Community Table is just here to generate hits, and make some money. It doesn't matter to them how accurate their recipes are. They can say they're making a copycat of anything they want, and if people search for it, and find it under their account, they get paid.

If you look at the ingredients on the bottle, there is no lime juice. However, it does mention "natural flavors", so maybe lime is a natural flavor. 😉 The ingredients also mention paprika extractives. That's not in this recipe directly. Maybe that comes from the chipotle peppers in adobo or the aji panca paste.

I saw another copycat recipe that had the exact same ingredients. The only difference was 6oz. of tomato paste instead of 16oz.. The consistency looked correct compared to this one (I just made it - WAY too thick). Even with the other being closer to the correct consistency they still added water to get it right, so there is no way that 16oz. is going to make it like Diablo sauce. This stuff ended up being as thick, if not thicker, than ketchup. It's 6oz. for me from now on.

OK, so I made this using only 6 oz. of tomato paste (as that is what you actually meant). And I have to say, this is a 'copycat' only in the sense that Taco Bell made some hot sauce, and then you made some hot sauce. I have to believe you've never actually tasted the real Diablo sauce, because your recipe doesn't come anywhere close to it. Way too sweet; yes, the real stuff is a tad sweet compared to other hot sauces, but this is sweet like barbecue sauce. And speaking of barbecue sauce, this recipe is way too smoky; the real Diablo sauce has a very slight hint of smokiness. Very, very slight. Your recipe is ridiculously heavy on the smoke. No lime; the real stuff has a big lime taste; not necessarily fresh squeezed lime, but more like the 'Real Lime' juice you'd buy in a grocery store. The vinegar in your recipe is not an adequate substitute for lime; you can't just swap one acid for another if making a 'copycat' is what you're truly going for. Still too tomato-ey; the ratio of water to tomato paste is too low. Salt; the real stuff has salt. Not a ton of salt, but the small amount of salt this recipe gets from the adobo sauce is not enough. Aji panca is great stuff; wrong for DIablo sauce. Back to drawing board.

We're glad you tried the recipe! The unfortunate thing about peppers is that they can vary so much in flavor. We tried this sauce side-by-side with Diablo and it was almost identical!

I agree that the variance of pepper flavors could potentially make a big difference, however, it's not just peppers that make this recipe so dissimilar to the original; see the numerous reasons listed in my post above. I really can't see how this ever could've been considered almost identical. It couldn't possibly have been. I would suggest you try it again, 'cause really, there are just too many other issues with it.
