I used to live in Quebec and my first night there I had Coquilles St. Jaques and loved it. I've never made it myself and appreciate the recipe, especially because it can be made ahead. This looks so good. Im trying one of your desserts for Thanksgiving. I used to cook professionally, been to culinary school, and I find it difficult to find good cooking youtube channels that I like, but I've been really enjoying all of your videos! Love the format, and I really like that you know these are totally tested and retested. I didn't really get it at first, how you show people how you plate it as well, but now after watching many of your videos, I really like that aspect, since it does make a difference for multiple reasons. Also love all your tips and especially the "whys!" When cooks don't explain some of the important "whys" you might think that step isn't important or can be changed.

Aw thanks :) I feel so honored! :) Yes you could definitely swap out the scallops for something vegetarian. I would go with some cauliflower florets. Just steam them quickly in the poaching liquid until tender but still firm, and then proceed with the rest of the recipe. Enjoy!

Yes I know what you mean, they can be confusing! Best thing to do is to NOT rinse them under water. They will absorb all that moisture and turn soggy. Better to just clean them with a dry paper towel, rubbing off any dirt that may appear, that would be sufficient :)

MMmmm! I made this tonight (Christmas Eve) and it was awesome. After the mushrooms, shallots & leek were cooked.. I thought, whoa--wait.. why start another pan?.. I just took a slotted spoon & moved the mushrooms, shallots & leeks into a Pyrex dish, reserved that cup of cooking liquid then continued the recipe using the same pan. :D ..Simple, but elegant recipe! (And I finally got to use the giant scallop shells I've had for maybe 15 years and never knew what to do with.. :0) ~Thank you Beth!! ❇ ❈ ❅ ❄~~~Merry Christmas~~~❇ ❈ ❅ ❄

No the shells are just for decoration. BUT you could make these in those puffed pastry shells (The Pepperidge Farm pastry shells you buy in the frozen food aisle. Just follow the instructions on the box for baking, then fill them with this scallop mixture and top with fresh parsley) that way you could "eat the shells" :) Enjoy!

Sure if you are looking for something on the lighter side you could replace with 2 tbsps of non-fat sour cream, thinned with about 1 tsp of water. Or are you looking for non-dairy?

Oh that is really my favorite French Christmas dessert! I would love to do this one. The problem is they do take a while to make/awhile to shoot! Unfort with Daylight savings time it gets dark so quickly (we shoot 5 recipes in a day) So I'd have to be able to make it in an hour! Hmmm let me see if that's possible.

Yeah! I love that soup too. It's also really good with some shredded chicken and frozen peas throw in after the soup is blended. If you want to make a "full meal" of it :)

I would recommend using bay scallops rather than the larger sea scallops. Sea scallops (in Florida) are three times the price of bay scallops, as they are much larger. Somehow, cutting them into quarters sorta seems like a waste, when the cheaper, smaller bay scallops will do just fine.Guess it's all about taste. And the larger ones do have a lot more flavor.

Actually just cover them with foil first until the scallops heat up, and then remove the foil for the last 5 mins to brown the tops and melt the cheese. Enjoy! :)

Chopping up a scallop may be easier for you, but for presentation purposes it would look nicer if the scallop was kept whole, sliced through the middle in a butterfly method, or pouch then in a bain marie regulate the heat to 60c. I think a few tweeks and you could be a chef yourself.

Why would you replace the wine with water? The alcohol boils off nearly immediately.
