I'd like to hear your thoughts on comparing back and hammer fists. Does the back not risk the small hi bones unnecessarily? Or does the extra wrist whip of it make it worth it?

I would use the hammer fist if anything because on a GUA CHOY (regular back fist) if the opponent ducks or changes levels we can hit the forehead. Or the skull in general🐉😊

Is there a reason you use backfist punch instead of turning your elbow towards your center for a straight centerline based wing chun punch? After/during the lap sau.

The title of this video is "Wing Chun Backfist - Everything you wanted to know." That's the main reason the backfist is used here. It details the proper use of the swinging gate technique and the efficiency of the backfist when receiving that particular kind of pressure from the opponent.

that's actually part of the swinging gate in Wing Chun. It's not possible for him to close the line on a swing gate move during quick transition - the speed it would normally be used at. If I had stayed there and worked the wedge pass (following the bong sao 3rd arm transfer) during a similar Wing Chun movement, you would be correct in that it would be easier to trap by closing that line as you suggested.
