Oh that meal looks delicious! You're a cook after mine own heart, as they say. You cook a lot like I do. I look at what I've got on hand, and then I consider my options and different ways to use, and it's off to the races. lol I don't do a lot of meal planning. I do meal prep...like roasting off a bag of fryer leg quarters, or slow cooking a pork roast, and breaking the cooked meat down into meal-sized portions. Chopping aromatics and putting in the fridge or freezer, things like that. I also try to keep a good supply of basic frozen veggies and canned tomatoes and tomato sauce. I can do a lot with things like that that are ready to grab and use.
