Cornbread Taco Bake -- Cornbread Based Taco Inspired Casserole
Cornbread Taco Bake
Ingredients
7 ounce packet cornbread mix
½ cup milk
1 large egg
1 pound ground beef
3 Tablespoons taco seasoning (or 1 packet)
⅓ cup water
11 ounce can Mexicorn, drained
10 ounce can Rotel, drained
2 cups sour cream (see my notes below)
2 cups shredded Mexican cheese blend (divided use)
½ cup chopped green onions
OPTIONAL TOPPINGS:
shredded lettuce, sliced olives, diced tomatoes, taco sauce
Instructions
Preheat oven to 350f degrees. Spray a 9x9-inch (or 2 1/2 quart) baking dish with nonstick cooking spray.
Combine cornbread mix, milk and egg. Stir well.
Pour batter into prepared baking dish and bake for about 15 minutes.
Meanwhile, cook and crumble ground beef until no longer pink, drain excess grease.
Then add in taco seasoning and water and stir to combine.
Then add in Mexicorn and Rotel. Stir well and simmer for a couple of minutes.
Once cornbread is cooked, take out of oven, then cover with ground beef mixture.
Next, combine sour cream with ONE cup of shredded Mexican cheese blend and green onions in a bowl.
Gently spread the sour cream mixture on top of the ground beef mixture.
Sprinkle the top with the remaining cup of shredded cheese.
Bake for about 25 minutes until heated through and cheese is melted.
Allow to cool for a few minutes. Slice and serve with optional toppings of: shredded lettuce, sliced olives, diced tomatoes, taco sauce

Hi Calvin and Marie ❤ You both look wonderful. I've made something like this, but my cornbread was on the top. Yours looks SO much better, especially with the sour cream layer. I think this might be dinner tonight, lol. I wanted to say that you both remind me a lot of the chef and myself. We work as a team, and whenever one or the other needs something, we're right there. I, like Calvin, had cancer surgery about 16 months ago, but mine was in the abdomen, and the surgeon ended up removing my pancreas, gallbladder, and spleen. I'm still trying to recover. Calvin has done so well and is an inspiration. Cancer is cancer, unfortunately, but we are warriors, right? I just love y'all and think you're such an amazing couple. Have a blessed weekend 🙏 ❤

Looks good . Tell you a little secret on how to get grease out of hamburger without pouring in something. Just push it to the side get some paper towels roll them up lay them in the grease and soak up the grease if to much grease just take a table spoon and get some out put it in a can or cup and then put paper towels in and soak up grease really easy.

Always good to see you both. Looks great. Still am not feeling well trying to get my lungs 🫁 cleared up so they won’t have to do a lung 🫁 wash. Went to neurosurgeon yesterday he wouldn’t do my nerve block because I was on antibiotics and a lung infection he said it could cause the infection to travel to other areas in my body but if not treated could be fatal if not treated. It’s not contagious though but if left untreated it could be very serious. Ask for your prayers and will always be in my prayers ❤️🙏✝️. Also this looks definitely I would love to fix looks yummy 😋

I love Mexican fish. I don't hear the bus on my pc. I had a nerve racking day today. This morning I heard a loud crash and my cat went running past me and I walk in the living room to see the ceiling collapsed and a big hole in the ceiling. Maintenance man came and they will be back on Monday. It was a mess to clean up. I posted pictures and about what happened on my communty page. I was shaken up for several hours.
