A Cornish Pasty, what a delicious snack; and in this video today I show you hot make Cornish Pasties! You can't beat proper Cornish Pasties, the meat, vegetables in a wonderful flaky pasty is a delight! Cornwall should be proud by their reginal dish; it's YUM!
Ingredients-
Pastry mix
➤ 125g butter
➤ 125g lard
➤ 500g plain flour
➤ 350g beef skirt or chuck steak
➤ 1 large onion
➤ 2 medium potatoes
➤ 175g swede

Pasties have been a favorite in my family for generations. My mom started putting them in pie shells because it cut the work down. If you’re strapped for time you can put them in frozen pie shells, just put the filling in and put second pie shell on top and crimp edges

May I add some suggestions? Use strong white bread flour instead of plain. Make it a good 3 hours ahead. Let the gluten develop the elasticity. The strong bread flour makes the crimp so much easier too. A proper pasty crimp takes a knack to look Cornish mind! Oh, and beef skirt is best. You'll not get a tough meat if you use that. Sliced firm spuds are best. Use PLENTY of salt and pepper. You'll be surprised at how much you need. No holes in the top needed. Brush with beaten egg and cook. ~ Cornish Cornish pasty maker of 40 years 🙂

@@sirbickery may I ask, is the pastry recipe right if bread flour is used? I always thought a pasty had its own specific pastry but he’s just done a basic shortcrust. Is that correct?

50 yrs back, I would do lunch on Wednesdays at the Saratoga Cafe, next door to the Saratoga strip club in Duluth MN. Best pastys ever with plenty of good beef gravy.

I live in Cornwall and was born in Devon. I'd say the arrow was on the Cornwall side of the border.

Do you put any salt in your flour for the dough mixture? And how much water do you add to the dough?

My tip regarding the pastry is to replace half the water with vodka. You get the benefit of the moisture, however, when baking, the alcohol burns off and you are left with a lovely, crisp pastry. NB just make sure you let the pastry rest in the fridge for an hour.

the cornish pasty should have a crust handle so that it can be thrown away as the miners hands were dirty the edge should be on top not the side

For best results, layer your Pasty, Swede at the Bottom, then a good waxy Potato, Onion with Beef last, then you want a Sprinkle of Flour a few Knobs of butter, this will then all melt down and combine to give you a Wonderful rich Gravy.

It's a nice recipe, but a pasty should always be beef skirt, not chuck.

Fault in this recipe. It said cook for 10 minutes at 200 and then turn down to 160 but it does not say for how long at 160 to cook them for?

You shouldn't pierce the pastry as its the steam internally that cooks it

Everyone giving out about this and that, I’m sure every household in Cornwall back in the day didn’t have beef skirt when ever they made their pasty I’d imagine they used what ever they had on hand. And like everyone who claims the best Lasgana and the best Shepherds pie. Everyone’s grandmother would have her own little tricks and tips that make theirs unique.

Wrong, Not a proper Cornish pasty. Use Strong white flour, the extra gluten makes it more pliable. You can use half-and-half if you want. IE Plain and Strong flour. SLICE potatoes, DO NOT CHOP.

This is not the way to make a Cornish pasty!!! Slice not cube ingredients! Layer ingredients starting with the potatoes followed by turnip (swede to non Cornish!) Then onion and lastly meat(Ideally shin) Salt pepper knob of butter! 🧈 crimp pastry on the side!!

Not a Cornish Pasty. Should be strong flour, no butter, lard only. Should be beef skirt.
