Premiere for editing. After Effects for compositing special effects. Boujou for major motion tracking. 3DSmax for 3D modeling. Logic for sound effects. For music, virtual instrument plugins for Kontakt 5 to use within Logic. They have a many behind the scenes videos talking about all of these things.

I can tell you that the steadicam Sam had attached a GoPro to (at the end of a stick) is a Hague mmc stedicam. It works really well, and it's quite cheap too

GoPro Sticky mount + Varies GoPro articulating arms + Canon DSLR Viewfinder, and then he probably just have the GoPro tighten to hold the viewfinder to his face! Pretty neat setup!
