Omurice looks like the ideal hangover omelet. You did a great job showing how to make this and explaining the steps :) I probably have all of these ingredients in my house. When you added the sugar to the rice after adding the ketchup I questioned your logic, but I've learned to trust the process!

It’s easy: after adding the ketchup I season with a little bit of sugar until I get the taste I want.

You did a good job demonstrating that dish! I make a lot of omelettes, I never thought to put rice in mine. And yes shiitake mushrooms are the best but I can't find fresh ones here so I use the dried ones soaked mixed with regular cremmi mushrooms.

Really enjoyed this! As a lazy Japanese-American, I just stir the eggs and cheese into the rice to cook together. My family calls it Boru Boru Rice. I haven’t tried it with mayonnaise, though. I assume you use Japanese mayo (like Kewpie) which is sweeter.

Japanese mayo definitely tastes different, but I’ve cooked this in many different countries and mayo was always the best option 😊

We already enjoy using leftover rice in eggs for bteakfast, be it something like biryani or tried rice, etc, so this wouldn't be a stretch. I'll definitely be trying it! Will need to buy ketchup, though...we don't buy it too often (our condiments of choice are mayo, mustard, and hot sauces), but we just ran out recently. We also don't have any mirin. I do think we still have some Shaoxing rice wine...

I feel the same way about ketchup! I'd rather have mayonnaise or hoisin, maybe katsu sauce would be yummy on this! Ooooh I have to try making this with katsu instead of ketchup! It will be so yummy!

No, because as I said: my first omuraisu was made with ketchup, so it’s the most important ingredient to me 😊

Hello! you said you tried many variations, i'll tell what I know, just if it can help to find 'the flavor': try to mix ketchup with tomato sauce / to put some mirin or sake to the vegetables while still frying (maybe a tad of soy sauce but not too much or it will be salty) / try okonomi sauce instead of ketchup. Anyway, it looks delicious!
