It's important to freeze this cottage cheese ice cream in single servings, as it becomes very hard when frozen. Single-serving is ideal: just take it out of the freezer 10 to 15 minutes before serving. Even if you use xylitol, the ice cream is still very hard. I recommend using powdered erythritol, as xylitol contains carbohydrates, while erythritol does not.
