[RECIPE IN THIS DESCRIPTION] Courgette Croquettes.
This little side dish is an alternative to croquettes (or tater-tots!) They don’t have a strong vegetable flavour, tasting more like the root vegetables it’s aiming to replicate! They do get a little bit dry as they cool, so I recommend having them with a tasty keto sauce.

INGREDIENTS:
- 4 medium Courgettes/Zucchinis
- 1 tbsp Salt
- 75g (3/4 cup) Almond Flour
- 85g (3/4 cup) Cheddar Cheese, grated
- 2 large Eggs
- 2 tsp Garlic Powder
METHOD:
1. Grate the courgettes into a large bowl. Add the salt and leave for 30 minutes - this helps pull out moisture.
2. After 30 minutes, place the grated courgette in a clean kitchen towel. Over the sink, ring out as much liquid as possible.
3. Preheat oven to 200c/400f. Prepare a large baking sheet by lining it with parchment paper.
4. Once drained, place in a large clean bowl. Add ALL ingredients and mix until well combined.
5. Take 1 tbsp of the mixture and mould with your hands to create a croquette shape. Place on the prepared baking sheet and repeat for the rest of the mixture.
6. Bake for 30-35 minutes, or until they are browning. Enjoy!
