Jake and Nicolle and their son Fox are living in the temperate rain forest and the winter is almost over. But, before winter ends nature is throwing a variety of magical weather our way including sun, rain, wind, snow, hail, sleet, and graupel many times all in the same day. The rain forest is an abundant and mysterious place. A local barge captain told us yesterday he saw his first bear of the season on the beach so the bears are now awake also. In this episode of the Jake and Nicolle show we powder kelp seaweed, make our own sea salt using fire and ocean water, free dive for fish and scallops, cook home made and home grown potato gnocchi, and chop wood endlessly to stay warm. We have now used about 50% of our wood storage and won't be able to dry more wood until end of May. Do you think we will make it? I have a hard time picking a favorite part of your videos as I become mesmerized watching the content of all your videos. I am kinda interested in the 2nd language that you are teaching Fox, what is is it? Having watched several videos similar to this, I have to admit I thought I was starting to get it... how so many sacrifices can be made, in pursuit of a dream. Then I saw Fox playing with the starfish... and I stopped breathing for a second. What you guys are doing is so rare, and beautiful, and amazing that I hope you realize... it's perfect! Jake, Nicole and the lovely little one. You guys making sea salt reminded me of whenever I get salted cod you have to soak it to remove the salt. rather than tossing out the water I put it in a pot on the stove and had wonderful fishy salt which went into seafood dishes and any oriental dish I made. The chinese put fish, beef, chicken pork into their basic stock and the rest of southeast asia has fish sauce. I was wonderful and cost a few pennies for the stove. Teaching the kid chinese at such a young age is very wise, hen hao. I'm a Yank retired to mexico 37 years now. I have two nephews aged 8 and 10 and we taught them English since they were very very young. And new they have a facility in their native Spanish and English. We play bilingual word games with them now. A froemd;u Gnocchi tip, boiling potatos adds water but baking them concentrates the potato flavor. Since I learned that I always bake my potatos for gnocchi. With the lovely wood stove you have you just toss them below rather than boiling water on top. And when you do boil potatos if you make bread (or even pancakes) the potato water acts as a natural preservative and adds a bit of flavor and the salt. I am going next week to harvest sea weed for food (gathered in the water) and also, my garden beds (gathered washed up on the shore). Making your own salt by collecting seawater and boiling it down is very satisfying. The taste and smell is something else. Need a really good airtight jar for storage though.
