I work at a middle school and we did a chili cook off. My family convinced me to make your recipe and enter it (they love your recipe and always want me to make it). So I made it and entered and won first place. So in a couple of weeks I have to work in a concession stand for two days. Our building principal asked me to make the chili so we can sell bowls of it for the event we are having since they loved the chili so much.

I remember my late mother kept her cast iron in the oven when not in use. It was a gas oven with a pilot light, which kept the oven about 85 to 90 degrees. She said it kept her cast iron seasoned and dry. Never saw a spot of rust on her cast iron, and she had a special pan for eggs, and they never stuck. I love cast iron cooking. I just made this chili last night for my kids’ church youth group... and it was a hit! Everybody loved it. I’m so glad I doubled the recipe and held some back for me, my wife, and my youngest son because there was nothing left when I picked up the kids afterwards.

Anyone eat chili with rice? In college I used to make big batches of chili in a slow cooker. Then for the next week I could take some rice, put chili on top and spread some shredded cheese on it and microwave the whole thing. Easy living.

I found an old chili recipe in an Aunt Bee's Cookbook a while back when I was in the Navy in my early 20's. I thought it was so good that I adopted it as my own. I would make a big batch and invite my Navy friends over. They loved it. It is very similar to this!

I personally like beans, because it gives a different texture to each bite, instead of just meat and stewed tomato. I like a 50/50 of black beans and kidney beans. I also add a can of corn, which helps cut the tomato acidity and add some color to the bowl.

try going a step further and add black eyed peas, even if folks give it a funny look before they take a bite, it'll look just fine once they taste it, and 3 bean chili is what my friends ask me to cook again once they have had it, but you gotta be sure to increase the other ingredients to keep it balanced well

This reminds me of a Funny Story. Years ago I used to make chili. I lived in a boarding house. My rent was $35 a week. That was the good old days. We all had kitchen privileges. Well here's my story. I like spicy food. So when I made chili. I dumped a whole jar of salsa in it. The funny part is how the salsa kept my roommates from partaking in my food. It was too spicy for them and set them on fire. But I liked it more for me. Well that's how you keep the freeloaders out. You make your food so spicy they can't handle it. Now that I'm older. I've been searching for the perfect chili recipe and this is it. I've made several other recipes and never cared for them. This is by far hands down the best. I will say after the first time making it I did love it but I wanted it a touch more watery so I add about 3rd cup of beef broth

Only a few fast food restaurants are good to eat at. Chili’s, Applebee’s , etc. are exactly that: microwave crap or frozen, then fried. Don’t get me wrong, I like some fast food places that many consider trash or not much above dog puke, but, that’s just me. I enjoy finer things in life, also. There’s absolutely nothing better than fresh or semi-fresh ingredients to make a meal extraordinary, plus, the pride of a job well-done.

I made this yesterday with the omission of beans for certain reasons, and it was phenomenal! I live with a Mexican family, and after I served them a bowl they were incredibly pleased with how spicy it was. They said they were glad it was so spicy because they hate mild chili. Later on, they heated some more up and made themselves chili burritos lol I wrote this recipe down and placed it in my personal cookbook. 10/10 will make again!

I made your chili today. As I write this it is in the crock pot. I followed your recipe, but I did dial back the chili powder to 1/2 cup. I pulled four chipotle peppers out of the can and sliced them up, and I sprinkled salt and about four turns of a pepper mill over the beef/onion mixture before adding the spices. I sampled the chili after about 30 minutes in the crock pot that was set to Warm (it's now set to Low). All I can say is WOW! It is outstanding!! I will definitely be making this again. Thank you for sharing this recipe!

From a Chili efficianado, I can honestly say I love this and most chilis. I mean, I LOVE chili. I have made chili recipes from 'round the world. Chili dogs, chili & eggs, chili n tamales, chili burgers, chili pie, frito pie, Yankee chili mac, even chili cheese pizza. I awoke one night to visions of sundae glasses filled in layers with chili, refried beans, more chili, sour cream and guacamole, chili again, covered in Cheddar cheese sauce--all pieces chopped to pass through a straw! Shoot! Just two weeks ago my wife and I drove three and a half hours one way to San Antonio just to have chili from Texas Chili Parlor. Gospel truth, that right there. And, Sir... I have watched you for a long time. I've stolen many ideas from you. I appreciate you immensely. Albeit, chili... Real cowboy chili... Texas Cowboy Chili... ...simply ain't got no beans. Real Texas Cowboy Chili is made with whole cubed meat (preferably brisket), just a few flavor ingredients including either strong coffee or Shiner Bock beer, simmered for at least four hours. You receive automatic forgiveness, though, no penance necessary; you ARE from Oklahoma, after all. A man can't help where he's born. This is not a complaint. Just an as is.

Californian here. You sound just like my old coworkers back in Texas. I used to give em Hell about their different cooking style when it came to BBQ but it wasn't that bad. I almost liked brisket by the time I moved back to the Golden State. Tri-Tip is still better but hey I can't fault you on it. They didn't even sell that cut of meat in Kerrville. The whole time I lived there though, I never once saw a single bowl of this famous Texas Chilli. I even went to a chilli eating contest where they did NOT SELL ANY CHILLI 😮💨. I did not originate here but, as a result of a career move of my wife landing us in the Permian, am a transplant from a state that will remain nameless, though is one that truly should fall into the ocean and whose initials might be similar in spelling to that Leftist unionist pustual known as Illinoizzz. Upon being forced to move here due to my wife's career, my expectations for Texas Red knew no bounds. But, alas, upon my first visit, when looking for homes, we were awestruck by our inability to find even one restaurant serving chili. When asking, literally everyone we met, we were invariably told to try Wendy's, or to pic up some Wolf brand at H-E-B. It took a while we eventually hit pay dirt. In retrospect, finding good Texas chili in Texas was exactly like trying to find a real, true-to-the-gospel, Bible-believing, uncompromising, running-at-Jesus, church within the Bible belt--all talk and no show, all bark and no bite, rare as hen's teeth. We eventually found both, chili and church, both in West and Southeast, Texas. Anecdotally... Honest truth: we went to Terlingua, the self egrandized, self proclaimed, world's number one chili Cook-off and, exactly as you say, could not procure even one spoonful of Red. Texas is great; we've made it home and learned to love it. But, all said, Texans can be big talkers with, in many respects, absolutely nothing to back it up. In fact, just switch those vowels and you have a more accurate idea of Texas (Taxes?).

I'm a long time fan and I've been waiting years to try this recipe, well today 26/1/22 I have eaten the best chilli I've EVER tasted. It took me so long to find all the original ingredients hear in the uk at a reasonable price but I have enough to make this 10 times over now. Thank you kent, shan and the fur babies for all you do. I entered this recipe in a local chili cook-off yesterday and placed 2nd out of 15 contestants!! I added 1 tbsp of liquid smoke since the weather kept me from cooking outdoors. This is some delicious chili Kent thanks for sharing!

Cowboy Kent and lovely Shannon, I made this for my parents (one recipe with beef for Dad, one with Beyond 'meat' for Mom) and it is now my Mom's FAVORITE thing to eat. She is an incredibly picky eater but she absolutely loves this (as does my Dad, only he prefers his beef)! Thank you so very much!

I just realized that what you know as chili, in Mexico it's frijoles charros, rancher beans or cowboy beans. We ad beacon ham and pork rind. we don't add Chipotle but now I'm trying it l for a change.

Chili was a staple for a mom & five boys. I use three different types of beans & since I live in town I fry up 80-20 ground Chuck/Italian sausage, add spicy tomatoes& tomato paste. Cook in the crock pot for several hours & Cowboy it’s a throw down! Love your videos!

Hey Kent, I made your chili a couple of days ago, ( it's even better as left overs lol ) best chili ever. great taste with just a little bite. It's a little hot for the wife ( she's sensitive lol ) so I guess next time just 1 can of rotel. I did add 2 kinds of beans ( kidney and chili ) This is my go to chili recipe from now on. God Bless

I make chili differently every time. But it always tastes like a good chili. I taste as I go and there's never a disappointment. Now I have to buy some of Ken & Shannon's Green Chili Chipotle Relish! I bet that would be good on Huevos Rancheros!

A little something extra my mom and grandma always added was about 1/4 cup of baking cocoa to their chili. It brings out a different taste but doesn't cover the spices. Only other thing we'd have along with our chili was a toasted cheese sandwich!

Howdy Kent! I want to thank you from the bottom of my heart for a wonderful recipe my family enjoyed this evening. Mind you, I cook for my fiance every single night and rarely do I ever get the reaction I got tonight. I dont enjoy cooking as much as others, mainly because I never make anything spectacular or worth trying again, I grew up poor as well and I make simple food. Tonight was different, I felt like making my fiance and kids a good dinner, but I didnt know exactly what. I took a look in the fridge and freezer for what I got and find frozen ground sirloin and start scratching my pretty little head for dinner ideas that would include ground sirloin. Then bingo, chili. We hadn't had chili in years. So there I go, searching KZbin for a good chili recipe and I skim through a few and come across yours twice, reading comments to see what others had to say. So I choose your recipe and I followed every step and used the original chipotle instead because I didnt know I have to order through you for your special chipotle. Anyhow, my fiance could smell my cooking and kept asking when it would be done and that the house smelled so good. So once it was done I then fixed him a bowl, as well as the kids and had him take a sit and and he zoomed through saying grace to the lord, so he can hurry on up for a taste and oh. My. Word. I felt so happy for the first time in a long time he kept on complimenting the food I made! He kept going for seconds! Thirds! Until It was wiped clean from the pot! This was a rare event in my house. We've been together for 5 and a half years. Kent, thank you for such an amazing recipe. This chili is to die for. June 2, 2019

Chili is one of my favorite foods! I like using a variety of dried chilis. And I always add beans, I love beans. I grew up super poor too, having huge bags of dried beans just feels normal, and it’s super sensible. I made chili and cornbread last night, my teenager ate half a pan of cornbread! This looks really good, and I love the cast iron tips.

Kent I don’t know if you were messing’ around kiddin or serious but you said you don’t add chicken broth to your Spanish rice but use water and you showed a can marked Pollo on the front and poured it in. Pollo means chicken in Spanish!!!

I doubled the recipe. I didn't have enough of the diced tomatoes and green chiles. Instead, I used 2 cans of the diced tomatoes and green chiles and 2 cans of the diced tomatoes and habenero chilies. Whooo-Wheee! Talk about fire burning your mouth. I still loved it! I thought the family would quit on the first spoonfull but they loved it too.

You are by far the coolest cat on KZbin, love the channel and have done several of your recipes. For this one the only swap out was I used ground turkey, chopped up and added some Serrano and jalapeño peppers. Also moms sent me her hot water cornbread recipe so you know I have a complete chili meal now! Only thing I’m missing is Bertha! Thank you my brotha!!
