Cowboy Kent you never have claimed to be a chef but you are. You have made a loving life long commitment to the culinary arts. As I've believed and still do since the first video I saw of yours on how to cook a country fried NY strip that you are as good if not better than any Michelin or Uniroyal chef no matter whom. Keep our eyes entertained and our chops licking. God bless you Mrs. Shannon. "O, Miss Agnes!" (as my grandmother would say) This looked so good, and so simple, that I had to try it out. I made two modifications, though. First, I really couldn't buy such an expensive cut of beef for my experiment, so I got the CHEAPEST cut of beef they had at the store. It was a 3 pound eye-round roast, at $4.49/lb, and I sliced it down the middle making two 1" thick portions. That's a TOUGH cut, usually slow-roasted, so beside the lime, I tried tenderizing it with a few whacks from a mallet. Second, they didn't have the DRIED ancho chili at the store, so I used just regular chili. The hardest part was pulling the leaves off the thyme! While doing that, I was listening to your presentation repeatedly, so I wasn't gonna make a mistake. It was so EASY, I had to write it down to make sure I didn't do the same step twice! The taste was AMAZING!!!! It was a little tough, but my wife and I both have store-bought choppers, and we had no difficulty chewing it.

Cowboy Kent, my father had a large cast iron pot. When I was a kid he only made chili in this pot during winter. My father passed away and I inherited the pot. I cooked with it today and I'm seasoning and caring for the it per your video instructions. Thanks from Missouri.

This looked amazing. Did you keep the temperature of the stove at medium-high for the entire process? I see some videos where they tend to lower the heat during the basting process. I’m still learning and would love to make a perfect porterhouse every time!

I’m a Kent Rollins fan for a lot of reasons. Number one. I like the man. I like what he is. And I like the way he circles the wagons. But if I didn’t like him I sure wouldn’t like his cooking. I try not to dislike people even if they go against the grain, which happens sometimes doesn’t it. Kent seems like a guy who hasn’t got a bad word to say about anybody. And I think that’s nice. But I’m going to tell you something. I would never ever in a million years watch Gordon Ramsay, because I refuse to tolerate his dreadful language whereby he has been guilty of using some pretty awful cuss words. Give me Kent Rollins any day. Having said that I’m not exactly a little angel myself. I try to be but if I get a fright in traffic, I’m sorry to say, I just might drop the F bomb, But I’m working on it and I hope the good Lord will help me sort this out. Anyway I will say this. There’s a big difference to dropping the F bomb in your car compared to saying it on television for all the world to see, which is what Gordon does. No thank you very much I can’t take that stuff and that’s why I’ll never ever watch Gordon Ramsay, But I’ll be watching Kent Rollins until the cows come home. Bless you my friend. You’re the man Kent.

My wife makes our steaks in the house this way. I'll have to tell her about the rosemary. She uses thyme and garlic and a shallot in her butter and she puts sea salt on the side instead of pepper. I think she does an awesome job. She made cheese steak mushroom and onions last night and wow. I'd never had cheese steak before I met her. (It's not the kind you put on hoagie rolls, she uses flank steak). Like I said I'm a lucky man, no one cooks like she can. We raised 7 kids and when funds were low she could whip up a delicious feast and no one went hungry!!!

Kent, that's the best kitchen cooking of a big steak. I made just about every mistake you warned about, plus had my family evacuate when I started off with an indoor 500 degree skillet all-side searing.

You would not believe what my wife is doing to a steak...sad really. We both watched your porterhouse steak video and Bam! I was ready to go!! Took a one pound porterhouse out the freezer...she wanted to have a filet...her way...she’s from New York. Nuff said.... I cooked mine just as you demonstrated...iron skillet, butter, Red River seasoning....yes!! She is using a Teflon pan.... Love what y’all are doing! Be Blessed!

Mr. Rollins, I am so proud to know you on you tube. My fiance and I love to watch you and your work and this is my favorite. Everything else you do is similar to my family recipe. You are a genius my brother. Long live the old west. My girl loves beag best. We lost our beagle awhile back. You are so blessed and I think we are also. I envy a little. 1 3/4 strip came out to 130 degrees. My fiancé absolutely loved it and so did I. Our new way to cook steak. She is sold on the whole recipe, especially the herby butter. Looking forward to making garlic bread. Thank you.

Oh my Word!!! You have done it again good Sir. Porterhouse is my favourite cut. The thickness of that one had me at the Git. Watching what you did with it, moved me. Beautiful. Perfect.
