Thanks for the birthday present cowboy Kent! Have smoked many a yardbird but have always used my own home made BBQ sauce. Have never tried a rub but will do this rub as it sounds very tasty. I make my own charcoal, mostly oak and hickory but some maple as well. Turned sixty four today so though I have a neighbor with chickens where I buy my eggs I could in theory steal one but have gotten a bit slower at running and would likely get caught! Will have to wait until I go to town and buy one I guess. Any day you put up a new video is a wonderful day! My hat is off to you and the lady. You are both a National Treasure. Many thanks from East Ky.

Kent, I'm a cook from southern Brazil (the mountains of Serra Gaúcha), and I fell in love with this channel the moment I found it. It's maybe my favorite cooking channel. The calming nature of the combination of simplicity, good taste, your accent and the humanization of food keep me coming back. I don't have much else to say but please keep making these videos.

My grandpa didn't have a tooth in his head. I don't ever recall seeing him eat BBQ. Every type of meat I ever saw him eat was fried, and he lived to be 90. I guarantee you that he would've loved your smoked chicken. You've inspired me to smoke one up. Right after I do a tri tip roast on the smoker. Beef is number one! I promise you chicken will be next. I've been a cook for 20 years. 16 of those years to present day, have been spent on offshore oil rigs as a Campboss in charge of the catering crews. Feeding 200+ men 4x a day. 480lbs of ribeyes a week. 4,000 eggs per week, 180 lb bacon per week. 230lbs chicken per week 160lbs coffee per week. 250lbs of pork per week. Extra supplies for hurricane season. and ..well...countless rolls of toilet paper. And countless meals & memories. I've never tackled cast iron cooking in full force. I've made roux & cornbread in cast iron skillets, grilled & smoked plenty of meats over charcoal and wood, but never dutch oven cooking. Watching you and Shannon these past few months has really inspired me to up my game and take more interest in cast iron cooking. It's fun, and taste better! I'm sure you've probably forgotten more about dutch oven cooking than I'll ever live to know or remember, but the skills, techniques, & experience you folks have, has taught me a lot about what I didn't know or know how to do with cast iron. Ya'll are humble, smart, and ya'll definitely love what you do. Sometimes starvation makes good food good. lol. But the best ingredient to make it better than good, is love. And that's exactly what ya'll put into every meal my wife & I have seen ya'll make. Thank ya'll for everything you & Shannon do Cowboy Kent. We just bought the cookbook and are very excited to try out some of those fine recipes and tips. And read those tales from the trail. Take care and keep those videos coming & we'll see ya'll down the KZbin trail. ~Ryan & Chx

Kent, love your show. I have a recipe for you that is primarily from the ILL / IND area. Pork tenderloin sandwich. You can find a few examples on YT, but it's basic. Take a pork tenderloin, cut a 3/4" slice and pound it out to twice the size of a hamburger bun. Salt / pepper, dredge in egg / flour and fry. Serve with onion, mustard, lettuce etc. on a bun. Pork in ILL is almost as good as the beef. I think you're viewers might like it. Good luck.

Also I will be doing a cook out at a church for leading people to growing relation ship with Jesus Christ on 9-21-19. Then another one on 9-28-19 for a wedding for some folks at my church. smoked chicken is quite possible one of my favorite things to eat. I have a Bradley smoker that i do up some chicken several times a year with. Haven't decided what my favorite wood is yet. Every time i make it, i say "That was the best wood!" Alder is amazing on chicken. Apple is nice if going light on the smoke, as is mesquite. Cherry's good too.

Another GREAT recipe video Kent and Shannon. I look forward to y'alls videos every week. I can't wait to try this recipe. I would've tried it this weekend for Labor Day, but I've had a request from my wife and family for my Hickory Smoked Beer-Butt Chicken over lump coals. Thank you both so much for all of the time that is put in to the videos, and y'all's willingness to help teach us. My family and I live in Roanoke, VA and I have people asking me "Where did you learn how to cook like that?", and "Can you teach me how to cook like that?" I answer them all by telling them about y'all's videos, and website.... My neighborhood smells great Everytime I get the grill(s) hot. I smoke using Hickory & or Mesquite chips with hardwood lump coals, and or gas grilling with Hickory or Mesquite chips in a foil pan. Thanks again, Bacon.

Doing my first cook on the PBJ I ordered and received in just 31 hours last week. Ribs today and a duck for thanksgiving. I’m pretty sure y’all were the ones who introduced me to the Pit Barrel Cooker Company

Looks delish and I LOVE chicken..actually used to raise some with my mom and grandpa back in the day..never for food but for the eggs..I've been looking into getting a hobby and the thought of raising chickens again has crossed my mind..little nervous about doing it though..lots of coyotes and wild dogs around where I live so..yeah..can't exactly do the ground coop I'd like to, have to do like my grandpa and do a raised off the ground coop.

Delicious to be sure! You Mr. Rollings are quite the light of my evening (watching this video at 11pm) Not having a smoker or a garden for that matter I still use your ideas and recipes more than you know. As always - greetings from Denmark. Have a fantastic and splendid day!

Great recipe Kent, glad to see you use hickory, that is the most plentiful wood here in kentucky, also my fave. I usually go 80% hickory & 20 % applewood or oak. I wish i could say i have, or could buy a metal barrel smoker, but we had one. Holes drilled , but just metal rods, no rebar. Use meat hooks from the smokehouse that are used to hang hog hams, shoulders,etc...., to hang over smoker rods. I like all kinds of smoked meats, works just like yours on smoked chix, hams, briskets, etc..., and once a laying hen has given her all , she is headed for the smoke barrel. A little tip for viewers, buy farm fresh eggs, there are no bleached white farm fresh eggs. The shell colors like brown, tan, cream , light blue, speckled, etc..., are all determined by the color of the laying hens ear lobes, farm fact, lotta folks don't know that. Kent & Shannon , God bless you and your food site

I mixed up a rub similar to this for smoking beef and pork, and it was delish... I'll be adding cumun to it for chicken now. Is never used smoked paprika or ancho chilies till I tried something you made and now I'm hooked.

Nancy Barnett I always wash my chicken as well but apparently according to the Center of Disease Control and The Health Department you are not supposed to wash chicken. They say you are adding bacteria to your sink which can potential cause cross contamination. I’ve been washing my chicken and poultry for years and I’ve never gotten sick or anyone else for that matter.
