I live on all military veterans only farm in Texas and I often do the outdoor cooking for us on the weekends. I must say I don't care for the heat, but we all enjoy the outcome. i’ve been using this method for years, except I use apple cider vinegar, instead of chicken broth. the vinegar helps to break down the tissue and makes them ‘fall off the bone.’ i’m definitely going to give it a try with chicken broth.

Much appreciate y'all for including that advice for folks stuck in apartments wanting to cook these up! I'm stuck in an apartment for cooking, and doing that method gives me fall-apart ribs every single time. Only thing I really do differently that I have a question about is the liquid; I use strong coffee, it feels right but I have no idea if it changes the flavor at all. And I genuinely appreciate that Cowboy Caveman clip! Looks like y'all got to have some good fun with that.

Kent I am going to say thank you as a military brat and former Pitman that has had to work in an open air pit room, in the middle of a hot Texas summer when the temps was a 115 with a 6 foot tall BBQ pit, gas fryers, grill, oven and griddle all going with nothing but an old worn out swamp cooler to keep us cool just to feed our men and women in the U.S. Army. And for those that are wondering when I say a 6 foot tall BBQ pit, I am talking a BBQ pit made from a 6 foot tall steel pipe that was about 10 foot or so long with no fire box. Hotter then sun on chromium steel in the summer, and a perfectly warm pit room in the winter from the heat of that BBQ pit alone. And like you Kent I hate cooking outside in the heat in the summer, as it is as bad as standing on 500F degree asphalt during a hot Texas summer and yep done that too.

I looked up how to cure bacon. Your video came up, I subscribed right away. I grew a city boy, gave that life a try, wasn't happy. I came to visit my mother in puerto rico and stayed. She's dying of cancer but I'm gonna stay. I love this life. Found a job at a dairy farm, never gonna make anything close to what I earned but I'm happy. September be 2 years with them ladies. I also have to heard them b4 I milk them, you are so right about hot days, remember in in the carribean, but rainy season is much worse. Still I wouldn't go back for all the riches in the world. You gotta love being you. That long story said. I just found and can't wait to keep learning how to cook amazingly great food

As someone who has had a couple heat strokes and several episodes of heat exhaustion here in this north texas summer heat I can truly relate! My neighbor won’t let anyone else smoke his food and I love to smoke anything from chicken to pork to beef. But it’s truly a battle against the heat! Plus trying to always improve my methods! I made ribs for independence day. They were great, my first attempt at them on a charcoal grill. Then my neighbor invited me over to try his. I almost wept at how good his were compared to mine. Next year I'll do them your way.

I use a pressure cooker and finish them off broiling them in the oven. They taste great, but at some point, I want to get a smoker. Like the idea of using a spoon for the membrane!

I love that you advocated for the steaming / grilling method... the amount of BBQ "purists" always say that water should never touch a rib are just way too stuck in the mud with their thinking. This is tried and true method used by people of cultures all around the world. The focus people have put on BBQ competition standards has really made them forget that it's just about eating delicious food in the end, not "who has the best ribs".

Bought a big electric smoker some time ago and ribs are so hard using 3,2,1 method and no smoke ring even though lots of smoke in unit. This way looks really fast and simple so thanks ! I put a heavy mustard base on them prior to trying to smoke ‘em. Good to see The Beag causing filming grief lol

Great video! I purchased a slow cooker that was for ribs. Very similar. Put the ribs in the provided rack with water or broth in the bottom.

I grew up in west Texas. Moved off to Alabama for a few years. Never liked ribs. Even tried those Dream Land BBQ ribs in Tuscaloosa several times. Moved to Oklahoma 25 years ago this last month. That’s when I found ribs that I really like and it all starts with that bone coming right out of the meat just like these. Everyone says that’s over cooked. I don’t care. They aren’t cooked right if I have to tangle with the bone to eat them. That is one the many things I love about Oklahoma. Nobody is afraid to serve up ribs just like this. I can’t eat red meat right now. Having allergic reactions to it. I only miss it when I watch Cowboy Kent’s videos. Hope you guys are staying warm enough out there. It’s starting to cool off here around Blanchard. It’ll be too cold before we know it.

That's exactly how I do mine. On the gas grill in the toss away pan with chicken broth and lemon juice. Then finish on the grill. You can pull the bones right out.

Now I have to/get to make ribs this weekend!! Another option for the oven: loosely wrap in a piece of heavy duty foil, and seal the edges. Then finish on a cookie sheet or baking dish. Not saying better than Kent’s, just another option that comes out amazing.

I took a cooking class where we learned this same technique. The only difference was that we steamed the ribs over a mixture of beer and water. I think the alcohol in the beer helped make the ribs less greasy.

Great episode. Your comment about cooking that day, ahile it was 117; reminded me. We were working cattle in S.Texas, had hit brush, well before daylight. Pushed a good herd up, but, by mid morning: those ole brahma cross cattle & horses, were dragging like they'd been drugged, it was Hot. Foreman, had us call it day, to come back later. We loaded up, stopped @ loaded up & stopped at little mexican cantina , a small leanto, under buch big mesquite trees. He had a thermometer hanging in good shade reading 117. Sad part ,we definitely didn't have any ribs ,like you just cooked, waiting for us. Thanks again, for sharing.

I usually use the 3-2-1 method for ribs on my offset. They turn out ok. Last time I fell asleep during the wrap so they got a 3-3-1. They turned out amazing! I do appreciate you showing how to make awesome ribs with no smoker.

Regarding the heat a few weekends ago in south Louisiana, it was 101 degrees with 94% humidity. I started cooking around a 20 gallon cast iron pot from the time I started to the time I finished I had 10 beers and 12 carbonated Waters a few Diet Cokes and two Tall Ranch Waters. It wasn't until I walked inside that I realized at some point my legs had gotten sunburned from the heat coming off the pot. The food was good though. Had I not overly hydrated in the days leading up to that I have no doubt there would have been a heat stroke.

I've done these in a Dutch oven, but when I'm at home, I'll use the instant pot. For the liquid, I like to use either apple cider vinegar, or a hard cider. I've found that a hard huckleberry cider pairs great with pork with or without BBQ sauce.
