Smoked Chops are always good if you think you’ll have leftovers for a few days. Grilling is a Favorite if you have a great dry rub to apply. In my opinion these are my options.

Mr. Rollins, I love a big thick chop, but I must defend the thin ones! They're perfect for both a quick pan-fried meal when you haven't much time and putting a lovely parmesan crust on before pan- or deep-frying. You definitely have to be quick with them, though, and avoid over-cooking them since they dry out easily.

I agree, even if you want a quick-grill ... I marinated some thin-cut chops that my girlfriend bought in teriyaki sauce for about two hours and grilled them on our gas grill that doesn't put out a lot of BTUs because it's a cheapy ... they turned out wonderful, the sugar in the teriyaki helped develop a nice char around the edges of the chops too.

When we butcher a hog. we generally cut our pork chops about an inch think. This winter, and matanza time. We will go for the thicker pork chops. Of course with the bonus of your great sauce additives. Loving your videos so keep them coming our way!

Greetings from a regular UK follower, Kent and Shannon. Thanks for your great channel (and books). I live in one of England's many shire counties - Leicestershire which is simply pronounced lestersheer. In the same way, Worcestershire is simple - woostersheer. The trouble is, I've never seen pork chops that size here. I'll have chat with the butcher!

I agree with you Kent. I put pork steaks on the grill and they're absolutely delicious and tender but you can't put them on direct heat until the very end and they turned out extremely tender also. Cletus tried to be the star of the show today. How wonderful is that. I love to see Cletus and all the pups pigs for 10 years old. Wow he's up there and yes he does have manners. Grocery store pork chops are usually 3/4" thick if you're lucky. I've bought thick cut from Schawn's and Omaha Steaks. They are about 1 1/4" to 1 1/2" thick and keep juices so much better. Thank you and Shannon and the pups for the fun and educational videos. Papa Bob in Washington, MO.

The audio mixing sounds great here too! In older videos, i had to turn the musical parts down cause it was like four times louder. This video, I didnt have to adjust the volume at all! It was very good sounding and well mixed

This is an awesome video recipe on pork chops. We always have at least 1.5 inches to 1.75 inches on the thickness with a local meat market who knows how to cut them up just right. Cannot wait to try the two sauces, the fun of your videos is the extra sauces that really bring out new flavors. At Christmas our family tradition is stuffed pork chops. Maybe you can offer ideas on that offering too. I purchased the food thermometer and use it on about every cook now. It really makes a difference getting the perfect cook. Nothing comes close to your videos Kent and Shannon.

Kent and Shan, thank you for another great installment. I watched this while eating left over pork from the grill. I agree with keeping the cuts thick. I've not gone as thick as you show here, but I'll give 'er a try. Also, I 've found that your Rib Rub goes well on grilled pork. We will definitely try these recipes. Both sauces look delicious. I can see how the sweetness in the figs work with the pork. Last, I usually use some apple wood with pork. Thanks again for the wonderful ideas! God bless you and your family.

I just got a Pit Boss 1150 pellet grill/smoker. The day after Thanksgiving Lowe's had it on sale with a $ 500.00 off the retail price with FREE assembly and delivery. That grill works great. It even has WIFI and blue tooth which lets me change the temp when I am in the house or running around town.

Thanks Kent! I made the wrapped version tonight and it turned out great. I had 1" thick chops so i onlg got them to 145 before i unwrapped them. After grilling them over open flame to get some color i basted them with a peach burbon sauce with some garlic powder and Worcestershire sauce in it. It was amazing! Perfectly tender & juicy.

I love thick pork chops. Best I've had was at a restaurant near Paduca, Ky. It was 2" thick. I buy mine from Wild Fork - 1 1/2" free range heirloom (Berkshire) pork; a little pricey but worth it. The meat is red not light pink or "the other white meat." I usually cook using the reverse sear method. Half inch of fat is just right for me.

I used to have trouble pronouncing Worcestershire sauce until I did some research into old English. The word is Anglo-Saxon and is pronounced Woos (or Wiss) - ter- shy- er (plus sauce). The first r is almost silent, the ces is a soft s sound, ter is ter and shire is shy -er. If you lived near Boston and Worcester (Woo-ss -ter) you would soon master the pronunciation. Great show - even with the rain.
