My mom is old school Mexican, from the state of Chihuahua, and when I showed her your tamale video, she gave a nod and said in Spanish "Huh, that nice white cowboy actually knows how to cook Mexican food properly" I was amazed, that was high praise She said the same again when I showed her this video, and your tortilla making skills Your Mexican approved Señor Kent, not that you needed it anyway I'm a big fan, thanks for the videos, entertainment and your amazing cooking Saludos Cordiales

❤I love hearing Kent talk. I was born and spent the first 8 yrs of my life in Eastern New Mexico so hearing Kent pronounce words we all said and still say is precious. There is definitely a language in the southwestern US...Oklahoma...Texas and New Mexico. Guess you could call it a drawl.😊❤

My father, a German immigrant who experienced the Depression in Germany and the USA, NEVER discarded bacon grease. Glad to see you making very good use of it. I’m impressed, looking good. It’s missing something on top of it, guacamole and sour cream with a little more cheese for color. Or diced red chiles in stead of the topping of cheese; or both. You have the best ever dish washers, Mr. Kent.

instead of dealing with the cheese sticking to your spatula after you flip, you can instead toast, flip, cheese, cover. the cover will make it a sort of oven to help melt the cheese, much easier on your spatula.

We make something similar to this only we make pancakes instead and smother it in maple syrup. Pancakes, eggs sunnyside up, bacon and maple syrup. All stacked. Thank you for your recipe. :)

Going to state this upfront, I'm just a country boy from Mississippi that enjoys trying new foods and learning other food cultures but this reminds a lot of a huarache I've had in the past. If someone with experience cooking huaraches could either confirm that its the same or explain the difference, I would be grateful.

Add some refried beans and salsa, and you'll have juevos rancheros. I eat them nearly every day. Green chiles in the masa is perfect.

In high school I cooked in a mexican fast food restaurant. The first time I brought home tamales, my dad tut took one out of the wax paper wrapper and bit into it. Then said,"Hi ow the heck are you supposed to eat this thing?"😂 I had to tell him he had to peel the corn husk off first. He loved the spicey foods just like me.

Oh, I have a couple ideas! Mix the bacon & sausage up in the to-lupa dough. Cook, top with cheese, then instead of flipping it, plate it and cover with a hot inverted skillet to melt the cheese so it doesn't stick to the spatula. I'd add hash browns, more cheese & then the egg. MMmmmmm! Maybe some ham to to make it extra special.

I tried a Mexican Tostalupi tonight for supper. It was a little different from yours, because I did not want to use Turkey Bacon so I tried corned beef hash instead of the bacon. It was really good. ...and you're right. Those chillies really made it better! Oh yes. I also added Shiitake mushrooms, white and red onions. I had to go back for seconds too. Be sure and try my version too.

jmo Had a family friend invite our family to their ranch for breakfast. She 'fried' corn chips, then added chopped serrano peppers, onions, tomatoes... salt & pepper, Scrambled it all, on a flour tortilla. I would have added cheese. Delicious.

A well seasoned cast iron skillet and a scary sharp knife, that's a well equipped kitchen 👍 i would have used 2 eggs and i actually got the seasoning on a 20 year old lodge skillet to where i can usually flip the eggs restaurant style it took some cooking to get it there

I've been eating homemade breakfast burritos lately. Bacon, sausage, or ham (whatever I have available that day), with onion and bell pepper, some hot sauce and seasonings in the scrambled eggs and topped with cheese before rolling up in a burrito tortilla shell. Watching this, I might need to add this recipe to my rotation!

Kent ya could melt that cheese just as well, without any sticking to the spatula or dripping in the pan by just slapping a cover on the pan. I love your channel. My first cooking experiences were over a camp fire, in boy scouts.

...Mr. Kent....I have had something very similar to this, but it had Homemade Refried Beans on it, ... and a bit of Salsa ... ..and that is delicious with this. Best Breakfast is Homemade Sausage gravy, on top of Homemade biscuits, with a couple over easy eggs! Topped with a slice of American cheese on the eggs, extra gravy and diced tomatoes on top!! Mmm Mmm!! ❤
