I've baked something like this, long ago, when I had a can of pumpkin. Pumpkin is a traditional ingredient of Tex-Mex empanadas. I really prefer baking to deep-frying. Cowboy Kent's crust is much better than the one I made back then. I'll try it again and do it better. (It wasn't 3 Dog Night, it was Creedence Clearwater Revival: "Proud Mary.")

It's amazing how many cultures around the world have a variant on this. My wife is from Mongolia and cooks a similar, but larger version called "Khushuur" (pronounced Hoosure). She puts finely diced cabbage in there for moisture, and after my 16 years of "westernizing" her sometimes gets into garlic and chillies. Will have to try the bell pepper and cheese next time she does it.

When I was stationed in Japan I found the same thing there called gyoza and they were great. There was one restaurant, not too far from Camp Zama, I went to called "The Gyoza House" and there was a line to get in that little restaurant all the time but it was well worth the wait. It was a small family business so everyone was involved. The wife, mother, and daughters did all the prep-work while the husband, father, and sons did the cooking, either steamed or fried. There's a larger steamed version called "Nikuman" which is the same thing as "Siopao" in The Philippines and they're great also.

That's no coincidence, the cornish pasty is the basis of the empanada. When tin miners from Cornwall England immigrated to South America and Mexico to work the silver mines they brought with them their traditional lunchtime meal, the pasty, when they married local women who used local ingredients the empanada was born. It's one of the first "fusion foods" that there is a record of.

I have a little story regarding dogs and cheese.... My wife and I were at a winery doing some tasting, and I ordered a cheese plate to go along with the wines we were sampling. There were two dogs roaming the grounds, and when they stopped at our table I gave each one a little chunk of cheese. From then until the moment we left, both dogs sat at either side of my chair! I don't recall what kind of cheese it was, sadly...

An empanada is a type of baked or fried turnover consisting of pastry and filling, common in Spanish, other Southern European, Latin American, and Iberian-influenced cultures around the world. The name comes from the Spanish empanar (to coat with bread), and translates as 'breaded', that is, wrapped or coated in bread. They are made by folding dough over a filling, which may consist of meat, cheese, tomato, corn, or other ingredients, and then cooking the resulting turnover, either by baking or frying. The origin of empanadas is unknown but they are thought to have originated in Galicia, a region in northwest Spain. A cookbook published in Catalan in 1520, Llibre del Coch by Robert de Nola, mentions empanadas filled with seafood in the recipes for Catalan, Italian, French, and Arabian food. These seem to be Mexican empanadas. In Mexico, empanadas can be sweet or savory, and fried or baked depending on the state or region.

I love Cowboy Kent he's taught me how to make so many delicious recipes. He's old school real and wholesome this is by far the best cooking show ever. Also I hope that I get the chance to try this man's chicken fried steak someday. Thanks for the awesome videos Kent.

Seeing the cubed cheese in this video, reminded me of our local store that came up with something called Cowboy Mix, which is a meat and cheese mix. The problem is, they started with chunks of beef stick, cheddar and pepper jack cheese cubes. Then they changed it, to just the chunks of beef stick, and cheddar. They dropped the pepper jack, and took the Cowboy right out of it.
