Ingredients:
1 cork or tbsp. white vinegar
1 onion
1 tbsp chopped/grind fine thyme
1 tbsp chopped/ grind basil
1 garlic cluster
6 large crabs (cleaned)
2 cups of coconut milk
3 tablespoons cooking oil
2 tsp curry powder
2 tsp turmeric
1 ¼ tsp masala
1 ¼ tsp geera
Salt to taste
3 wiri wiri peppers
1 tiger teeth pepper (to boil)
1 stem Eschallot
1 stalk Celery
1 eddo ( u can also use eggplant/balanjay)
Instructions:
1. Clean and Cut the crabs in half or how many pieces u would like and use the vinegar to was them then set aside.
2. In a large pot add oil, when it gets hot add onion to fry then add the grind garlic, grind wiri wiri peppers, and all the dry spices to fry then add some water to the mixture and chunkay until the water evaporates.
3. Add chopped fine thyme and chopped basil and give it a turn to cook for 1/2 min.
4. Add wash crabs turn and cover it, leave it to bunjay for abt 5 to 10 mins
5. Add eddoes or eggplant, coconut milk, peppers and leave it to boil for abt 20 to 30 mins or until the eddo is soft and the coconut milk water has evaporated (it shouldn’t be too thick nor thin)
6. When the crabs' curry is finished add eschallot and celery, serve them with rice or roti.
