Filipino food is so diverse that you can go to 1 restaurant and order a dish and go to a different restaurant and order the same dish and they might be way different. Really an incredibly underrated cuisine compared to other Asian food, and sometimes I'm glad it hasn't become super popular, because I get to see people try Filipino food for the first time and be amazed.

You’re right! Crispy Kare-Kare is the crispy pork belly version of the traditional kare-kare with the oxtail. For both, the dipping sauce would be a little bit of fermented fish/shrimp paste. It goes well with the peanut-butter based sauce. Java rice has a version in the Philippines that’s made with both turmeric (yellow color if used alone) and annatto (which gives it an almost orangey color), plus sweet/tangy bbq sauce or banana ketchup to give it a kick.

Woot where my Filipino peeps at? That’s bagoong (shrimp paste) and goes with the Kare kare. You guessed right! I have it on plain rice though. I don’t usually eat Java rice or grew up eating that. Garlic rice is fire though! Happy you enjoyed our food! Definitely try others you haven’t had!

Generally java rice is just made with turmeric to make with yellow, sometimes fried with butter. I dont usually see it in family homes where I'm from but I see it a lot in restoraunts and they usually add something to make it unique

Most java rice is traditionally made with ashuete/achuete which is annatto, it gives it that reddish/orange hue. It's also why Filipino candied meats are red and why chicken oil is orange. Though, Filipino food doesn't really have any 1 way to make anything, everyone's family makes dishes differently and there's loads of ways to cook certain dishes. Even something considered the national dish like Adobo can be cooked in many many different ways.

Next time try the Beef Kaldereta ( Filipino Beef Stew ) eaten over rice. Another version of rice you want to try is the Arroz Valenciana ( its like eating Paella, but with rice ) This particular type of dish is only served for special occasions, so you need to request it in advance, and believe me, you will prefer it to that java rice. Other dishes you still need to try are Chicken Pastel ( Chicken Stew ) , Crispy Pata ( Fried Pork Knuckles ) , Embutido/Morcon ( Filipino Meatloaf ) , and for dessert try the Brazo de Mercedes ( Custard Meringue ) Once you try these, you'll gonna crave them worst than a pregnant Momma at 2AM, no cap!

Java rice can be fried or steamed rice flavored with seasonings butter and turmeric or what we call luyang dilaw and what we call achuete or Annato in english for that deep yellow or almost like an orangy natural food color.

you could try next crab fat rice, tortang talong (eggplant in fried egg), beef mechado (beef stew in tomato sauce), chicken inasal (regional grilled chicken) sago at gulaman (drink in grass jelly w/ tapioca in vanilla essence) if there's available in your area

Karekare is normally cooked with oxtail and bagoong (shrimp paste) for side dish it’s salty, with peanut sauce and it’s an acquired taste. Sometimes served with plain rice. The Java rice or garlic fried rice sometimes mix with ketchup either banana or tomato. There are so many ways how to make fried rice in the Philippines. I’m glad you like our Filipino food. 😄😋yes sometimes Filipino food … it’s been underrated but for me I love it regardless!!!

I guess, from the look and color of your rice It's a FILIPINO VERSION OF JOLLOF RICE not a JAVA Rice. Java rice is yellow because of turmeric I am a filipino and I saw some restaurant and food market serves java rice nowadays. In some areas only they knew are common plain white rice, garlic rice or fried rice.😊
