When I woke up one morning and realized the beautiful, smart, 20-year old Filipina I married the day before didn't know how to cook American food I thought I was going to starve over the next few years until she could learn. She offered me a deal, in that she would cook Filipino food for a few days, and if I didn't like it, she would not cook it again. Seemed reasonable, so I agreed. Well, she cheated. She cooked pork adobo for me the first night. It was so delicious that I ate it all, and asked her to fix it again the next night. It was so addictive that for four days that was all I wanted for supper. I've since learned to eat and enjoy many more Filipino dishes over the past 50 years together with her. And we've spent five decades exploring the world's cuisines side-by-side in the kitchen. Our kids picked up on the love of cooking, and are now teaching our grandkids the love of not only the Filipino food they grew up with, but also many others.

The sauce for the lechon kawali is a liver sauce. The sweetness usually comes from the type of vinegar we use. Its a coconut vinegar.

I lived in ATL and worked in Gwinnett County for 4 years (2011-2015) and there were no legit Filipino restaurants. Sadly Buford Hwy did not have a single one worth praising. Glad to see things are changing in the right direction there. Miss ATL! Gotta put this place on my list when I come back to visit.

I immigrated to the US in the summer of 1990. I was 9 yrs old and starting in the 4th grade. Our other family members that were already here tried their best to let us know of the many social norms, the do's and dont's, but they failed to explain to me that bringing lunch from home was a "no-no" especially if you're bringing something exotic like Filipino food. Well on my 1st day, my Mom had prepared pork adobo over rice for my lunch and I still remember seeing the disgust reaction from my classmates faces when I opened my lunchbox aka Tupperware. Eh, you can say we were just kids back then, but it was the last time I ever brought food from home to eat at school, middle school, high school, college and I still hesitate to bring home food to work. Your reaction to tasting Filipino food is helping ease that childhood pain in me. Thank you.

If you go to a Pinoy market there in Atlanta, get several n I mean SEVERAL bottles of Lechon Sauce (Brand: Mang Tomas) to add to your pantry. The Filipino pantry always hv soy sauce, vinegar, fish sauce, Knorr Seasoning, Banana Ketchup… and Lechon Sauce !!! It goes great with ANY fried food like chix or pork chops ( hehe better than brown gravy !!) Then try Lechon Paksiw … 2nd dish frm leftover Lechon (if any left 😜😋) From LA, CA

Good that you like such food! Overall, Filipino food is a combination of Spanish, Mexican, Chinese, Indonesian and American food, San Francisco native and world traveler here! I ate Filipino food from Vancouver to San Diego to Boston. Eating Filipino food in The Philippines is quite another experience!

The Lechon Kawali needs more frying to give the skin that golden brown color and crispy, crunchy, crackling texture when you bite into it. It comes with a tangy and sweet liver sauce.

I must say that the Pork Adobo looks really good. You can tell that the meat has absorbed the sauce pretty well to make it flavorful and that it has been cooked to tender perfection.

Wow! You did pick the old favorites so I wasn't surprised that you liked them... you can explore some more and next time, try the pork barbecue which is even better than the chicken barbecue. If it's raining, you should try (if they have it) the Pork SInigang and maybe the Beef Kare-Kare... by the way, the Pork Adobo is originally Filipino but the original Adobo didn't have soy sauce which was added later when Soy Sauce (came from China) was introduced in the Philippines. The original was cooked with very little vinegar, whole black pepper, and bay leaves.

For me, Chicken Pork Adobo is the best. The taste is so awesome that I eat it several times every month.
