After watching your previous two videos on the two pot method, you and Keith convinced me that is definitely the way to go. Thanks to your video, the two pot method is the only way we do our crawfish boils here in south central Indiana now. That muddy water coming out of that steam pot is all the convincing I needed. Great video Russ and crew. I can't wait on the next video.

Considered invasive for everywhere else here. One day I'll make it down south for the fresh stuff. For now I'll have to settle for frozen but at least my taste buds don't know any better at this point haha.

It's a big pot and holds a lot of water so you can't be shy with the seasoning. This boil was spot on. I think time and experience doing these is the best teacher to really dial that flavor in just right. Thanks for watching and hope you get to try them one day.

If you don't have a high performance pot to bring it back to a boil within 2 mins of adding the crawfish, how you determine to how long to cook it? Do it is smaller batches to allow a fast recoil and remove from pot? First crawfish boil next week. 60qt regular pot and 30 lbs of crawfish.

Yep I was raised just a few doors east of Bozo’s on Ingalls ave. Lived in Pascagoula until 2005 when Katrina uprooted me. When I came back to the coast 8 months later I moved over to the Biloxi area. I also worked at Ingalls shipyard until this past November when I finally retired. I do this full time now and love it

From a real Coonass, not a bad job! If you have small kids wo don't eat the bugs, boil them some weenies first! That will keep them busy. You can ride these roads and have multiple ways we cook crawfish. I put lemon juice and orange juice (adds a sweetness) after my veggies are done. If you don't have one of those ring things, use some frozen jugs of water. Push them in when you want them to soak. Another ingredient some use is mustard. It also adds some sweetness and horseradshy flavor some like. But the main key to a successful boil is, PLENTY OF PATIENCE (it's not about speed), BEER AND FRIENDS! POOYAH!!! NOW THAT'S WHAT IT'S ALL ABOUT!!!

Some seasoning has much more salt content than others. I’ve learned from trial and error which are the best seasonings that aren’t loaded with salt

What would you recommend if you don’t have a boil boss? Shock them with a bag of ice? I’ve got my second boil coming up this Saturday and wanna do it better than last time

Adding ice is the same as adding water because it will melt and it dilutes the seasoned water. I use to do it, but I could taste such a huge difference in flavor after using the boil boss, but with that said, you can take the seasoned water that you use in your previous boils, and put some in a plastic 1 gallon ice cream container and freeze it. When you get ready to cool the pot, just dip the bucket of frozen seasoned water into the pot just for a few seconds to release the ice from the bucket and drop that block of frozen goodness in. The size of your pot and amount of water will dictate how much to use. I would probably take 2, 1 gallon buckets for a 120 quart pot to drop the temp down fast. I understand that you will probably won't be able to do this because you don't already have it on hand, but it's a good trick to remember for future boils.

@@SmokyRibsBBQ Awesome thank you sooooo much! I had a friend tell me to save some of the water from the last boil so I’ve got two 1 gallon zip lock bags left over in my deep freeze! It’s from last year, but I’m sure it’ll do the trick! Thanks again so much! I completely forgot I did that LOL.

If you just spin that basket. You don’t have to keep stirring it while cooling off and it works faster

@@SmokyRibsBBQ if you spin the basket, because of the matter inside the basket you’re moving the water at a greater rate than if you stir with a paddle. Love your videos.

Rus, what did you pay per pound this year? I'm planning a crawfish boil in June here in MN and I've seen prices range from $6.99/LB to $7.49/LB.

These were $3.85 per pound, but the price should come down in April and May, unless fuel cost to have them delivered from Louisiana keeps the price up.
