Another hint. If you don’t have coffee or don’t like coffee, if you boil the water and pour it over the mix. It intensifies the cocoa flavor. My father used to put the dry ingredients in a mayonnaise jar and take it with him on his deployments. Then after he baked it, he would immediately put chocolate candy bars on the cake and that was his frosting. (He was Navy veteran, working in food services.)

I am over 65 and I learned this from my mom, who's family made it also. We never put coffee in it though. We called it Wacky cake. We never topped it with anything and it was so good! When my mom made it, sometimes there was bits of flour where it didn't get mixed well enough. She'd tell us they were the wacky's. lol!

I watch your channel often. One day my 5 year old grandson was watching too. He asked me so innocently, “Grandma would it be making fun of her for talking about her voice?” I told him if he intentionally was making fun of you, but if you are just acknowledging she has a different accent it’s ok. Then we talked about how people living in different parts of the world have different accents, but it’s not wrong. God loves all of us no matter our different accents. Never thought a cooking show would teach more than a recipe. My grandson has a pure heart and would never intentionally hurt anyone’s feelings.

I had to give up white sugar so now I substituted it with date sugar and I used my own freshly milled flour and it turned out good. Of course I had to make a few minor adjustments. My mother found this recipe in a magazine called "Grit" over 45 years ago. It's been a family favorite since then and always requested to bring to any function. Simple easy and delicious when paired with a frosting (icing) made with corn starch. Poured over a cooled cake is like a pudding. I use a bowl so I can use my hand blender in the batter. And to lick the beaters is one of the best things. The icing we have used for a long time was provided by one of my grandmother's neighbors in Kansas. It's a cooked frosting but can be put on a cooled cake. It's very fudgy and buttery tasting too. Perfect complement to the cake. And easy to make while the cake is baking.

I've been making this cake for years and it's my favorite chocolate cake recipe, and by far the least expensive. I got my recipe from Peg Bracken's "The I Hate to Cook Book" and she called it Cock-eyed cake. Our school cafeteria called it Wacky Cake. I'd never thought of using leftover coffee in it, but I think that's a brilliant idea!

Try making frosting out of instant pudding made with cream instead of milk. It whips up, and it's a bit less sweet than regular frosting. Pistachio is great on chocolate. Yes, dairy, but just try it.

been making this for 40yrs...I call it Chocolate Cake in a Pan. My Mother inlaw gave me the recipe and it's the Best Cake ever!. I Ice it with 1/4c melted butter 1/2c choc chips 1c sugar 1/4 cup milk tsp vanilla and cook it in sauce pan and pour over warm cake. Icing is like fudge after it cools!

I made this recipe a couple nights ago and my husband said it was the best chocolate cake he ever tasted; the texture came out light and fluffy and the cake is nice and moist. I frosted it with richmond chocolate frosting. Delish.

My grandmother always made Wacky Cake. I am 75 now and I remember them as far back as I can remember!! She made her icing using Hershey's chocolate bars. That was when I was older.

This is a favorite recipe handed down in our family for several generations and we always doubled it for a 9x13 pan. It was the only chocolate cake recipe we made. No need for any other, since this one was so good. We called it "Funny Chocolate Cake". I've heard it called both Crazy Cake and Depression Cake. This was the first recipe we were taught to make as children. There are vanilla and spice cake versions, which are also family favorites, and my daughter developed or adapted a strawberry version as well. So versatile, quick and easy, and moist. Can be made into cupcakes. We typically didn't frost it. We never used coffee in the recipe, just water. Our recipe didn't call for a tbsp of vinegar - just equal parts vanilla and vinegar - and we used either white vinegar or cider vinegar. Great recipe!! Thanks for sharing it.

We called it whacky snack cake. Would sprinkle with powdered sugar. Good with nuts.

Ever tried with jelly or jam? My mom used to make box yellow cake, poke some holes in the top and then spread with red plum jam, and we have a German place here that makes something called sacher torte. It's chocolate cake with apricot in the center and a sort of ganache type topping. Hers did have eggs in it and I would bet their's does, too, but I bet you could do strawberry or raspberry with this one or maybe the vanilla version.

@@SymphonicEllen when I was in pastry school, our instructor was a German master pastry chef and he had us make and decorate a Sacher torte. They're originally from the Sacher hotel in Austria. Many European cakes are drier so they add jams or simple syrup to add moisture.

We had this recipe as long as I can remember. It's called "Crazy Day cake "and our recipe was put in a 13x9 pan and doubled your recipe. Ours has apple cider vinegar. We never frost it,just put whip cream or ice cream on it. We always mixed by hand in a big bowl and oiled and floured our pan. Mom always said when it cracked on top and pulled away from the pan,it was done. My brother still eats his with milk in a bowl with it. Also Mom said to pour the vinegar over the baking soda to see it fizz to rise the cake,but I see that's not necessary. Love you Chanel and I have one of your books. Bless you

Thank you once again. This cake brings back nostalgic memories. It's a wonderful cake And thank you for the verse from the Bibal. I truly needed that today. I had a disappointing day with doctor's not listening to me and my kidney. And they are not compatible to the power of God. Thank you for this wonderful cake and I'm off to make one❤😊
