I can't tell you how happy this made me as a cook from the deep south. Looks like home minus the kimchi and nori lol, but that's true appreciation to want to see how the taste incoorperates into the flavors they are farmiliar with and love! I appreciate your desire for authenicity. There are tons of things I'd do differently, but 100% this is good southern cooking and I'd be honored to be a guest for this meal! Top notch.

I love that too! It's cool- the difference between the 2- she always incorporates her safe foods like Americans use ketchup to try new things! She uses her background knowledge to relate the dish to something she has had before. And he tries them all as they were made, immersing himself. the mentality of soul food and traditional korean food is such a similar dynamic making the most out of all you had turning the "worst bits" of what the people in power would throw away, into the best bits of a meal now a days. traditional korean never like to waste and soul food couldn't afford to waste.
