Wonderful soup! Tip we received from a mushroom farmer....shitake mushroom stems can be eaten, just cut off a bit of the end and slice thin circles and add to cooking vessel to whatever dish you are preparing. We have been doing this since hearing of this method. Thanks for your recipe!

I often make cream of mushroom soup and always change things up a bit to keep life interesting. Christine, you inspire me! I absolutely love what you did here and can imagine how delicious it is. Will be heading to the grocery stores to gather up all those mushroom varieties to toss into my pot and will be faithfully applying some of your techniques (I love the mushroom liquor step). Oh, and my immersion blender always gets a regular workout since I bought it 12 years ago! Love that tool!! Keep on inspiring us!! You da best!

I pick wild mushrooms all spring, summer and fall and feast all winter long. Mushroom cuisine is my specialty and I approve your methods. I always learn something from you. The Jasmine rice for instance. I shall definitely have to give that a try next time. I don't use ginger but I do add a spoonful of Marmite for extra Umami. I like fresh herbs as a garnish too. Maybe some Enoki and a slice of sourdough on the side. I like your chips too. BTW, I just made some Wild Mushroom Hot and Sour soup the other day. I think it is more delicious than pork or chicken hot and sour soup. Thanks for being you.

Yum! I love homemade cream of mushroom soup. Especially when using a combination of dried foraged mushrooms and fresh ones too. Plate presentation tells me it is delicious. Will make it this weekend.

My dad and his brothers were good at picking wild mushrooms on my dad's farm in Alberta. One of my other uncles was also good at picking wild mushrooms. They were very tasty when they were cooked up. Dried mushrooms have a very good flavour. Homemade cream of mushroom soup is so good. The soup you made looks quite tasty. Green onions and thyme are good in cream of mushroom soup. Cheers!

Christine, I am thoroughly enjoying your videos and have made several of your recipes, including this mushroom soup. It turned out fabulous and everyone LOVED it! The recipe calls for the juice of half a lemon, which I added, but you did not add any in the video. What is the purpose of lemon juice?

Thank you so much Sarah. This is one of my absolute favourite soups. I did add it in video but I probably got edited out when we just trimmed the length a bit. The lemon juice is a great way to lift and enhance the flavours in the soup, without imparting a strong lemon flavour. In general acid is used to do this in a variety of ways. I hope this helps.

Mushrooms are so delicious. For the king oyster chips , I just sliced them thinly, drizzled with olive oil and baked for 10 -13 minutes or until crisp. I love using that technique . Thank you

At 4:35 she says they are shitake mushrooms, they are not, they are portabells mushrooms. Known in the PNW for their hamburger size caps and woody/nutty flavor. Correct me if I'm wrong, post pics to prove it! Lol. Love mushroom soup. Gonna make this one for sure!

Guys, just to clarify, it is the shiitake mushrooms I am slicing. Portobellos, have almost black gills and the stems are bigger and edible. The shiitake have these woody stems and a meaty texture. The shot is super close up so they look bigger than they are. thanks for watching

well this is the 2nd time I made this recipe and we love it!! BUT, this is the 1st time I've tried to make the king oyster chips and not so sure that was a win... used thin slices brushed with olive oil in the middle of a 375 f oven for 45 mins.. help?

Glad you loved the soup ! For the chips it is too long. You are looking to crisp them up but not totally dehydrate them. Temp is good , I would try more like 15 minutes , maybe turning the pan for even colour. Convection is key. As they cool down they crisp up more. If they are completely flexible still , you need to bake them longer. I hope these tips help and sorry that I didn’t have the exact recipe for these.

I always inspect my mushrooms after rehydrating because several times I have found rehydrated maggots along with them. Not the protein source I desire.

It's pretty common. After I take the mushrooms out of the soaking liquid, I give each piece a very quick rinse under warm water for a moment to wash off anything that's clinging to it. These are wild mushrooms and the worms are part of that natural environment. Anyone who gets squeamish about it shouldn't eat ketchup!

@@SuzanneBaruch I do the same: wash each of them off. It gets rid of the residual dirt as well. I would say if people are squeamish about the worms, they shouldn't eat anything at all and pick up sungazing.

I thinly sliced them lengthwise , drizzled with some olive oil , s& p ( added some tarragon ) and baked at 375 till golden brown (roughly 13-15 min but will vary )and starting to crisp up. They are amazing . I hope this helps

I love mushrooms and I am lucky I live in Finland as you can go into the forest and pick your own wild mushrooms, but I do need someone to come with me as I am still not sure which one you can or can not eat LoL. but when I can get a friend to come with me there are some mushrooms they pick they look like they would kill you LoL

Use a coffee filter instead of paper towels. I don't know for sure but I don't think regular paper towels are food safe compared to coffee filters plus coffee filters fit better in the sieve.
