A traditional recipe from Bohra cuisine which is delicately flavoured and is extremely simple to make. Here is an authentic Bohra Lagan Seekh recipe that has been passed on for generations. Very simple and highly delicious one-pot dish. Mutton mince is mixed with ginger, garlic, green chilies, spices, onion, coriander leaves and potatoes. This mixture is set on the pan and layered with beaten eggs, tomatoes and cooked on slow flame. You all are going to love this बोहरा लगन सीख. BOHRA LAGAN SEEKH
Ingredients
400 grams mutton mince (keema)
2 inch ginger, finely chopped
1 tbsp finely chopped garlic
3-4 green chillies, chopped
1 tsp red chilli powder
½ tsp turmeric powder
½ tsp cumin powder
1 tsp coriander powder
1 tbsp garam masala powder
½ tsp green cardamom powder
1 medium onion, chopped
3 tbsps chopped fresh coriander leaves + for sprinkling
3 medium potatoes, boiled, peeled and mashed
Salt to taste
4 eggs
4 tbsps oil
1 medium tomato, sliced
Method
1. Take mutton mince in a large bowl, add ginger, garlc, green chillies, red chilli powder, turmeric powder, cumin powder, coriander powder, garam masala powder, green cardamom powder, onion, coriander leaves, potatoes and salt and mix till well combined.
2. Break in the eggs in another bowl, add salt and whisk till well combined.
3. Heat oil in a non-stick shallow pan.
4. Spread the mutton mince on it and spread it evenly. Make small holes all over the mince and pour the eggs into it. Arrange the tomato slices on top and sprinkle coriander leaves. Cover and cook for 15-20 minutes.
5. Cut into wedges and serve hot.
