Creamy and Yummy Sweet Potatoes and Leek Soup that will warm you up on a cold winter day

This leek and sweet potato soup easy to cook and tastes amazing. A really special and unique recipe.
Ingredients:
2 leeks
3 shallot onions
2 cloves of garlic
1 sweet potato
olive oil
Salt, black pepper, nutmeg
1L vegetable broth • Homemade vegetable bro...
1 tsp balsamic vinegar
50 mg cream

Two questionsmp, sweetheart: Can I replace sweet potatoes with honeynut squash and replace cream with a beaten egg? Been wanting to try this but skeptical. Ever tried eggs in soups? And if yes, does it need to add special seasoning or omit any present in this soup? Turned out a pop quiz instead of a couple of questions! 😅

Hi dear friend, yes you can swap sweet potato with honey-nut squash. And to be honest I haven’t tried it with egg, so I’m not sure but I do believe that you can use a plain yoghurt, maybe Greek yoghurt to make it creamy instead of using cream. ❤️

A great soup except i could do without the olive oil and cream. Another alternative for the leeks is cabbage.

I noticed you put the Shallots into cold oil which is not good as the oil needs to be hot for the cooking process to start. And why turn it into just LIQUID WITH NO BITE WHEREAS LEAVING IT CHUNKY IS FAR BETTER. And the end it is completely ruined by the addition of cream.
