1 small cauliflower (approx. 400 g / 14 oz), cut into florets
2 large potatoes (approx. 300 g / 10.5 oz), peeled and diced
1 small onion, finely diced
2 garlic cloves, minced
750 ml vegetable stock (3 ¼ cups)
200 ml (¾ cup) plant-based milk or cooking cream (e.g. oat or soy cream)
1 tsp olive oil
½ tsp paprika powder
½ tsp nutmeg
Salt & pepper to taste
Toppings (optional):
Roasted sunflower seeds or pumpkin seeds
Fresh herbs (e.g. parsley or chives)
A dash of plant-based cream for extra creaminess
