Try an immersion (stick) blender. Life changing! No moving soups and sauces to the blender.

Dot, I save all my vegetable scraps from prepping vegetables. I place them all in one container then freeze them. I continue to add and add along. When container completely full. I make homemade vegetable broth with scraps. I boil vegetable scraps in water until broth is made. This recipe looks so delicious 😋😋😋. Thank you so very much for sharing. Love Tamson. 👍💗😇

This soup is delicious! So creamy but not too much. It was almost equally delicious before I added the cream. Almost :I And really easy. Your instruction was right on. I will make this again & again. Thanks for posting. I will check out more of your recipes.

I made this soup on the weekend and my Mom and I loved it. The fresh dill makes it so delicious, and I actually used the whole packet of fresh dill. I add about a teaspoon of lemon juice to each bowl, it didn't curdle the cream I had added to the soup and it makes this soup magnificent. I have tried the soup with and without lemon juice and it's excellent with lemon juice because it marries so well with the dill. I loved the thickness of the soup. Definitely a recipe I will make it again! Thanks, Dot2Trot! New subscriber!

Got everything in the fridge, but never had celery soupe and hate cauliflower. But I’m going to make it. My husband always love everything I cook. Nothing to lose. Thanks for the recipe.

The advantage with cauliflower is that the taste is neutral so you'll taste the celery and dill.

Dot2Trot's Low Carb Living hi, Dot today I’ve made the soup, but the only change I’ve made instead of cream I’ve used coconut milk. The soup was very good. All family loves it. My husband told me to make a big batch so we can have some before dinner everyday. Thanks for the recipe.

Emulsion blenders are so nice for this. Can blend it right in the pot and no blender mess!

We just finished making this, awesome! About 1/3 the carbs of canned celery soup, 10 times better tasting and a fraction of the cost per volume, will freeze for later, thanks! We added mushrooms after puree and some parmesan to top the bowl.

The insta pot is so easy! I was intimidated at first and started with bone broth and was so I pressed with the decrease in time and improvement in flavor. Then I started on meat....well I am hooked!

That looks really good. I use xanthum gum for a thickener. It only takes a very small amount. I get at walmart.

Oh Dot! You’re the best! Thank you for making your delicious recipes printable! This soup looks wonderful and Im inspired once again to get back in the kitchen. Cooking low carb requires Cooking! That’s right..... we can’t find fresh food out there in wrappers. Cooking takes time to buy, prep, prepare, enjoy, and clean up. That’s a lot of investment on our part. I can’t afford to experiment on recipes that crash. Your recipes have proven worthy time and time again! Thank you for your contribution in helping others to eat healthy and delicious! I'm doing dairy free right now too...I might give this a try with a little almond milk in it instead of the cream. Probably would not be as thick, but might provide that creamy element.

I love celery juice and this recipe couldn't have come at a better time. I, like everyone else on this planet have been drinking celery juice every morning for the last month. I have to say I am not crazy about starting my day in this coldest of winters ever, with a pint ice cold celery juice. I'd much rather have a mug of this soup to start my day (or a bulletproof coffee). I have about 3 litres of celery juice left so guess what I am going to do now? Well, adapt your recipe and use up my celery juice. of course. I don't have any cauliflower at home right now and was wondering how you felt about my using xanthan gum instead? That would eliminate having to transfer the soup into the blender and back to the pot too. Although I could use my immersion blender right in the pot if I decide to go out and buy some cauliflower. I am living in the cold north in Canada and your recipe suggestion couldn't have come at a better time. There is such a demand for celery now due to this craze, so if you see it - buy it, as you can always freeze the soup for later use. Thanks Dot - you're looking good!

The cauliflower is just to show an alternative way to help thicken a low carb soup. Xanthan gum works just fine but it isn't allowed on the Autoimmune challenge we are doing. so I say have fun with your celery juice!

I'm not an expert so I'm kind of new to the keto but I have a friend that use cornstarch and butter to make her soup thicken

I don't use cornstarch. I thicken soup a couple of ways: 1. reduction (just cooking it down until I get the consistency I like); 2. Heavy cream is a great thickener for creamy soups. 3. Vegetable puree..pureeing veggies in a soup always thickens the soup. 4. Add xanthan or guar gum -- this one is tricky as you do not need much -- I usually start with 1/4 tsp and mix it with light olive oil so it doesn't clump. If you use too much it leaves a slimy texture. So it's best to stir it into the soup in small amounts. Xanthan and guar gums are from plants and have some carbs but shouldn't add a lot per serving.

This looks amazing! I've been looking for new soup recipes and not finding much that really caught my eye and then this showed up in my sub box at the perfect time! :) I love celery but have to strain it for stringy bits (I have stomach probs and am on a pureed and liquid diet that can't have 'bits') and was wondering when you thought the best time to strain would be? do you think it would work to do at the end or is soup going to be thicker and harder to get through the strainer by then? (Otherwise I'm thinking I'd do the celery onion part, add broth, blend that mix and be doing the cauli separate and blend in after the celery/onion/broth has been strained. But if you think it wouldn't be too bad to do strain at the end or in some other place/way I haven't thought of I would love to know.) Anyways, thanks for sharing- this it really fits the bill for what I've been craving lately and your recipes never disappoint thanks for all the time you put in to make them so easy to follow and see what's going on while you cook and edit. Hope you're having a good week so far! :)

I think your plan of pureeing the cauliflower separate from the celery makes a lot of sense. I attempted straining it for bits too when I first tested the recipe but found that it was too thick for the strainer and I was loosing too much volume of soup. So yes, puree the celery and onion and strain it before adding the pureed cauliflower. But then blend it all together with the dill, before adding your cream.

How long do you think this would keep in canning jars in the fridge? Looks awesome for the hubs to grab and go for lunch.

I would say 3-4 days since there are no preservatives. It's possible it could last up to 6-7 days but I find home made soups get iffy after 4 days. This does freeze well.

Do you not have to strain the soup first , what about the fibrous part of the celery?

So what are macros per serving? On your website it says serves 4 but you don't state if the calories are per serving or per the whole thing.

Kenneth is right that cauliflower doesn't add flavor to impact the taste. Most vegetables work as a thickener when pureed. You just need to think about combos due to flavors. But if you are looking for other options, try pureed zucchini. Broccoli could work but if you use too much it could dominate the celery flavor.

@@Dot2TrotsLowCarbLiving deleted my comment by mistake. Cauliflower is awesome and you don't even know it's there. Very low carb and it is a plus. I use my Vitamix to blend it which is totally awesome.

I carefully made this and weighed out all ingredients on a digital scale and used fresh dill as recommended. The wife and I ate 2 bowls each. Was it good? Yes. Was it as good as your dramatics at the end of the video led me to believe? Ah! no..not THAT good!!!! lol Oh, BTW Cook-1 Blender-0
