I don't know if Dot will see this but oh my god. I cook for my disabled father, and it is so so SO rare that he actually eats leftovers. I have made this for him twice now and each time he has enthusiastically eaten leftovers! I wish mere words could emphasize my excitement. My wife just made this for dinner. I just had to leave you a note saying THANK YOU!!! This is the best Bacon Cheeseburger recipe I've ever had. No bacon cheeseburger pizza or casserole can touch this recipe. I had 3 helpings before she stole the remaining 1/3 for her weekly meal prep. Our kids, including the one that hates pickles, raved about it. I'm currently debating on making another batch to hide in my man cave. THANK YOU SO MUCH FOR THIS RECIPE!!

Just made this today with some slight changes. I used cubed Gouda and bacon cheese and mixed it with the cooked beef, cooked bacon, mushrooms, tomatoes, two teaspoons jalapeño pepper (tiny chunks), chopped dill pickles n red onions. Also made some quick Keto barbecue/ketchup (2 tables spoons of tomato paste, with apple cider vinegar, garlic, pepper, onion powder, and some erythrotol syrup as sweetener. I dappled a little chili pepper sauce in it too. Wasn't much, just enough to coat everything.Mixed all of that with the meat mixture and put it in the pan. Poured the egg mix, made with HWC and sour cream (instead or mayo), garlic, salt n pepper over it and then covered it with shredded cheese I had on hand. It's a Mexican style mix. It came out amazingly good. Thank you for this recipe. It really inspired me. I love making and experimenting with casseroles. This was perfect and I can try it again, with chicken, sausage and other veggies.

Wow, I just made this and it was amazing. Was a little worried the binder would make it quiche like but not at all. Only thing I did different was an extra pound of ground beef, cooked onions with ground beef and just added an extra egg and a little bit of beef broth to the wet mixture. The pickles and mustard give this a nice tang. Just found your channel and loving all the different things I look forward on trying. I see haven’t posted in some time,I hope all well. Just found you. Love your style and content. I'm going to try many of your recipes. You make this style of Cooking normal as if it were another cultural table. Makes me feel comfortable learning all the knowledge you share. Wonderful. Btw you look great, and give me hope that I can turn my health around with new shopping picks, cooking methods and low carbs and higher protein. Aa,a,child of the 40s in a modest family of 7, mammal made all meals morning, noon and night from scratch. No supermarkets. All individual butchers, fish stores, produce was bought off a horse drawn wagon. Mamma was self taught in everything she did, especially making meals for 7 people 3 times a day. We had little but never knew it due to mamma's strength and continuing loyalty to who she was which translated to our family. Being orphaned at age 2 started her life of fierce independence. With little money she embraced her family with kindness, love and could turn out delicious platters of food with imagination, love and a great palate. When I watch your show I see memories of the 50s with mamma. Thanks Mrs. Dot.

I cut the recipe in half. I didn’t have ground beef so I subbed it with 1 lb cooked hot sausage. Eliminated tomatoes. I reduced the egg to 2. I softened 4 oz cream cheese and dabbed small dabs of it under the top layer of cheese. Soooooo good. i will try the actual recipe once I have ground beef. The mixture of cream, mayonnaise and eggs is brilliant!! I added some garlic, little salt and pepper to the cream mixture:) eliminating the tomatoes made it basically non-carb except for 4 carbs from the cream cheese but that’s for the entire casserole. So less than 1 carb per serving. (Again I cut the recipe in half)

I learned to make this when I was 9. It's such a terrific easy dish to teach children how to cook. Frosty, welcome to the channel and keto/low carb eating. Here is a quick start for you. What to eat: 1. Animal Protein (eggs, beef, poultry (with skin), seafood (but nothing breaded), bone broths, offal, meats like sausage, bacon, deli cuts (with no more than 1g of carbs and no sugar) 2. Dairy (hard and soft cheese but nothing processed (think velveta), heavy cream, heavy whipping cream, full fat cream cheese, full fat sour cream, full fat cottage cheese, high fat plain greek yogurt) 3. Fats (For cooking use rendered animal fat like butter, ghee, tallow, lard, duck fat, bacon fat, etc., as well as coconut oil and palm oil; For eating/sauces/dresings use avocado oil, macadamia nut oil, extra virgin olive oil, mayo); Foods with healthy fats like avocados, coconut milk). 4. Veggies (all greens -- if it's a leafy you can eat it!, cabbage, broccoli, cauliflower, Brussels sprouts, zucchini, celery, tomatoes, cucumbers, mushrooms, onions, pumpkin, peas, peppers and chilies, radishes (just check the carb count for all veggies, as some are higher than others). 5. Fruit: berries like raspberries, strawberries, blackberries (blueberries ok but they are high in carbs) with berries, eat rarely as they still are sugary -- make it a treat; avocado, olives. 6. Nuts & Seeds: macadamia nuts, almonds, pecans, walnuts, hazelnuts, flaxseed, sesame seeds, sunflower seeds, pinenuts. Need to be careful with nuts and seeds as you can over eat. 7. Drinks -- water (tap, carbonated, sparkling, infused (no sugar added at all!), Tea (hot or cold no sugar), Coffee (can have with cream but no sugar); diet is ok but you need to be careful as it causes sugar cravings and data starting to show it causes weight gain or stalls. Alcohol like wine, low carb beer, or hard liquor (no mixers) ok but you stop burning fat when you drink alcohol as your body must get rid of alcohol first. Alcohol should be limited or abstain for weight loss. 8. Herbs & spices: Yes you can have, but just count carbs as ground herbs are more concentrated. Stay away from rubs with sugars, fructose corn syrup. 9. Condiments like ketchup, mustard, sauces, salad dressings. Allowed but use ones with no or very low sugars (better yet make your own). Try to keep salad dressings to less than 2g a carbs per serving. This is a "short" list but hopefully it can help you get started.

I finally made this last night, and I have to admit, I was a little skeptical about the tomatoes making the casserole too wet. But, that was not the case at all. This casserole was so delicious. I'm so glad I made extra since I had the extra meat to use. I can't say enough about this recipe. My family loved it too. It will also be well suited for batch cooking. I made two changes: I used ground bison and I added about 1/4 cup diced pepperoncinis at the same time as the pickles. Next time I'll add more. This was so delicious. You need to show how is looks on a plate . I wanted to see what kind of texture the egg sauce turns into after cooking.

Hi, Dot! I’m made this recently, and it’s absolutely delicious - so tasty (I especially love the pickles, it has everything I love on my cheeseburger). It’s amazing, but the leftovers are just as good, or even better, than the first time around. Since I live alone, I froze most of the leftovers, i’m sure they’ll defrost and re-heat well. Next time I am going to try cutting the recipe in half. This casserole feeds a crowd, wouldn’t it be a great dish to bring to a potluck? It wouldn’t last long! Keep up the great work, you’re such a gem, and a fantastic resource for delicious Keto recipes! Thank you!

I think this'd rock for a potoluck, but I'm biased haha.

Thanks Dot I decided to try this recipe for my hubby as he thinks keto is silly. Anyway I would make a few changes--although it was good I would not add the tomatoes--maybe as a side -because I found they were too soggy. I would add more fresh garlic (hubby loves garlic) and instead of using white and yellow cheddar cheese I would use old sharp cheddar. I have my hubby on keto and he doesn't know it --even though he is feeling much better for it. I want to try your pizza casserole next. Thanks for your recipes----I agree with others that you need to plate your recipes so we can see what they look like.
