Lemon Garlic Pasta w/ Pan-Seared Scallops 🍋🧄🔥 Full recipe below! 💛
Scallops
• 16 oz scallops, room temp; cleaned & foot removed
• salt + pepper
• avocado or olive oil
• 2 tbsp butter
• 3-4 cloves garlic, smashed
• 2 sprigs of thyme *optional
Pasta
• 2 tbsp avocado or olive oil
• 2 tbsp butter
• 1/4 cup minced garlic
• 1/3 cup lemon juice
• red pepper flakes to taste *optional
• 32 oz heavy cream
• 8 oz freshly shredded Parmesan cheese (grated parm in a bottle can work too, but won’t be as good)
• @goldensteer French cuffs seasoning
• lemon pepper
• paprika
• salt + pepper to taste
• 1 tbsp freshly chopped parsley for color *optional
• a little less than 1 lb of mafaldine pasta or pasta of your choice; cooked in salt water
• parmesan, chopped parsley & lemon wedges for topping
- once scallops are clean, pat dry on each side then coat evenly with salt + pepper
- place heat on medium/high then coat bottom of pan with avocado oil
- once oil is smoking, add scallops & let sear for 2 minutes
- flip scallops then lower heat to medium/low
- add butter, garlic & thyme to pan; once butter is melted, use a spoon to baste scallops for 1 minute
- remove scallops from pan & set aside
- wipe pan clean then add oil & butter over medium heat
- once butter is melted, add garlic; let cook until fragrant
- add lemon juice & red pepper flakes
- once simmering, add heavy cream
- let thicken to a sauce then stir in parmesan cheese
- stir in seasonings; continue to let simmer for a few mins then taste for additional seasonjng
- continue to let sauce simmer until it’s thick; this may take 25-30 mins. just stir occasionally and let it simmer until it reaches your desired thickness
- once thickened, stir in parsley
- turn heat off then add cooked pasta; stir until pasta is evenly coated
- plate pasta topped with scallops, freshly grated parm, chopped parsley & lemon wedges on the side
