As an european I always have dried porcini mushrooms in my kitchen and I use them often at least as spice for many dishes. Loove them. I'm vegan for over 10 years and mushrooms have always been one of my favourite foods. ❤

Qui nel nord Italia (sono di milano ) usiamo fare il risotto ‘carnaroli’ con funghi porcini , veloce da preparare e ottimo da gustare Inoltre puoi sostituire il burro con dell’ottimo olio extravergine di oliva e, anziché il brodo di carne , usare brodo vegetale (io non mangio carne )

Maybe in her recipe book? Gnocchi - 1/2 ‘00’ fine flour and 1/5 fine semolina. At the end she adds Mascarpone (you could add heavy cream/ double cream if that’s all you have. I hope this helps.

Specialist Italian grocers, in person or online, normally listed on Amazon too. Take your time to check the quality and cost (sometime inflated). Where I’m based there’s also a fine upmarket supermarket that has most foodie ingredients, you might have similar shops where you are? If not online. Happy cooking ☺️

Ottimo piatto, bella signora, splendida preparazione. Però, ricordiamo che: glI gnocchi NON SONO PASTA. Sono gnocchi. E si fanno con le patate, e non con la semola. Gli gnocchi come pasta sono gli gnochetti Sardi. Ne faccia una delle preparazioni classiche , per i piatti freschi della bella stagione che arriva.
