I’m currently in high school in Wisconsin, and I feel like I don’t have a lot of friends. Cooking has really helped me cope with my loneliness and I feel like you have really helped me for the past few years. Thank you

Aww I'm glad to hear that Spencer :) . You know what, life gets SO much better after High School! And I say that as someone who was also pretty lonely in HS too! But I have to say looking back on that experience, I think going through period of loneliness in life makes us more empathetic as people. Everyone at some point should experience it so that as they move through life they become kinder, gentler people because they know what it feels like. So maybe this is just your time for learning that :) But really HS is such a blip on the radar screen of life (it's hard to think about that now when you are IN it and it's your whole life) but trust me the years ahead will be your best years and you will look back on these days and kinda laugh a little bit :) . So hang in there, keep cooking! It's what really helped me, I never felt lonely when I was cooking, and look where it led :) Follow your dreams, they always know the way :)

Wooow God bless you Spencer. I too was very lonely through hs and still am. But I’ve found comfort in God and you too can also if you haven’t. God showed me that He made me different for a reason and I’ve slowly come to understand why. You weren’t made to fit in Spencer and soon I pray that God brings the right people into your life. To help you walk in your destiny. Keep on hoping and dreaming knowing that the steps you take were ordained by the creator of the Universe. He loves you so much!! Awww your comment just made my day :) . I SO remember those days! In fact, I think the early twenties are the loneliest times in a young person's life because there usually is some kind of lifestyle switch that happens, but looking back (and I just turned, gulp, 50 this January! Yikes!) it was also one of the most introspective. It's when I really realized how much joy came from cooking and nurturing others. It may have been a simple pasta dish and a $6.00 bottle of wine, but having friends over (even those I didn't know very well) pushed me to make connections that I still have to this day. I hope these days remain exciting for you and that you too make some fun connections that will add more comfort to your life when family is far :) DREAM BIG! xo

The inviting relaxed feeling you have created sitting in front of the lovely bay window is a pro's touch. How you're in focus and the background isn't brings another cool level of interest, but when I saw how nonchalantly you cut back and forth to the kitchen while in real time (your mouth is saying the words) describe it all so succinctly from the living room; I had to write. Oh yeah they are so yummy whirled up and turned into a sort of pesto :) You could also reserve a few before whiling in blender for some larger pieces too. That would also be great!

This was SO delicious, I'm going to make it again tomorrow! Instead of Italian seasoning I used some dried oregano and dried basil which was perfect. I didn't want to go through the trouble of making bechamel so I just added a little heavy cream to the sauce and cooked it for a few seconds. So glad to have a new use for sundried tomatoes, thanks Beth!

Oh my gosh, Beth! I’ve already made this twice and am making it again tomorrow, but As the animal-rights person I am, I have decided to now give up milk. I have purchased unsweetened almond milk and hope that it will work well in this recipe. I have read that it is fine to substitute it for milk. PS I have to say that I add lots of spinach every time I make it, and my friends and I enjoy it even more! Plus I never use unsalted butter, and everything comes out just fine. I absolutely love your recipes. You are the best.
