Creamy Taco Mac
Ingredients:
1 lb ground beef
8 oz macaroni pasta (I only used 6 oz)
1 cup heavy cream
1 cup cheddar cheese, shredded
1 packet taco seasoning
1 can (14.5 oz) diced tomatoes, drained
1 small onion, diced
2 cloves garlic, minced
1 green bell pepper, diced
Salt and pepper to taste
Directions:
Cook macaroni according to package instructions until al dente; drain and set aside.
In a large skillet, brown the ground beef over medium heat.
Add onions and green bell pepper, cooking until softened.
Stir in garlic and cook for an additional minute until fragrant.
Sprinkle taco seasoning over the beef mixture and mix well.
Add drained diced tomatoes and heavy cream.
Stir to combine and bring to a simmer.
Reduce heat and let simmer for 5 minutes, allowing the sauce to thicken slightly.
Stir in the cooked macaroni and shredded cheddar cheese until the cheese is melted and the pasta is evenly coated.
Season with salt and pepper to taste.
