what did you mean when you said against or with the grain? This is when you were working or the jointer. ...

Yeah primarily when you are milling the wood, getting it from rough dimensions to exact dimensions, is when you can experience it. So jointing and planing are critical times to watch out for the pattern. If you go against the grain when doing these steps you might often see “tear out”. Looks like little extra divots or chips that were removed due to the cutting having a harder time cutting into the grain vs with the grain. It’s like running your hand through your hair one direction that pushes it down, easier to move your hand, but the other way makes it stand up, hard to move through. Hope that helps.

Try this article kmtools.com/blogs/news/grain-direction JKM uses the "petting the cat" phrase vs my hair example above but same concept. The exercise is more of visually linking what you see in the wood to petting a cat, rubbing your hair one direction, or the rope example. If you move one direction it frays or stands up (this causes the tearout when the blade cuts) if you move the other way it glides through much easier. I can often see this in the wood by trying to predict if my blade path is going to push the fibers up or down (down is the easier cut that prevents tearout). Sometimes its hard to get around cutting against the grain (end grain cutting boards, boards that have knots where both directions are with the grain towards the knot). In these chase you want to make sure you are taking very light passes and also your blades are very sharp. If they're dull they will snag and pull the fibers up (more than what you want which create tearout).
