Honestly I just use whatever one I have on hand.

Do you use a primer like gesso before or a sealant/varnish when done? Was wondering if either was really necessary for book edges? Thanks.

I do not. I just paint them.

Maybe try it with watercolor (as dry as possible) like the professionals do ;)

Gosh, that's a lot of work to cover the cover. I suppose that's why bookbinders do this painting when the text block is out of the cover.
