I've made this twice now, second time for 18 people, and it is easy and absolutely delicious. Thank you Chef John! I have to admit though, that I cut back on the sugar by almost half, and it did not lack in sweetness. Also, in the future, I need to let it cool in the kitchen, not on the table, because it puts the guest's patience to a hard test, it looks so good they'd rather suffer burns than wait half an hour.

For those asking if you can use canned peaches, yes. I just made this. I used a 29 oz can of peaches and a clear glass brownie pan. I think it's 8x8 inches, or maybe 9 x 9. I don't know the exact dimensions. I'm NOT, after all, the Superman of my brownie pan. Drain the liquid of course. I didn't use the lemon zest but followed the rest of the recipe. Well, I used margarine instead of butter because it's all I have. It just got done cooling for 40 minutes. I tasted it and it's pretty good. Now I'll have to go to the store later and buy some ice cream and/or whipped cream.

So my brother made this today using peaches he just picked while I distracted his kids and it came out amazing. It was absolutely delicious and wasn't too sweet like so many cobblers. You could actually taste the fresh peaches! The sweetness was balanced very well. We both discovered you independently (I was first!) and are huge fans. Keep up the good work! 🤗

I made this today, and it finally cooled down enough. simply amazing! we used fresh Georgia peaches (live in St. Augustine, Florida) and the filling was perfect! I was sceptical, but you were right, no need to add sugar to the peaches. the topping is fluffy and that sugar glaze gives a nice crunchy/chewy texture. Thanks chef John for another keeper recipe!

From his blog Ingredients for 8 portions: 6 large peaches, cut into 8ths zest and juice from 1 lemon - Placed in a buttered baking dish (about 2-inches deep is perfect) - Mine dish was 10-inches across, and holds 2 quarts For the batter: 1/2 cup (1 stick) unsalted butter, room temp 1 1/4 cup granulated white sugar 1 1/3 cups self-rising flour (or all-purpose flour plus 2 teaspoons baking powder and 1/2 teaspoon fine salt) 1/3 cup rolled oats 2/3 cup whole milk For the top: 1/4 cup granulated white sugar cold water spritzed generously over the top - Bake at 375 F for about 45 minutes, or until browned and crispy.

My grandmother made an amazing peach cobbler, mostly because my grandfather disliked peaches. She'd make cobbler in a long baking dish, put peach filling in one end, and either strawberry or raspberry in the other. The juices mingled, and my dad and I always wanted the middle part, where the two combined. Now I have to have people over for dinner so I can make a cobbler!

I just made this with cherries and didn’t change a thing. What a beautiful dessert. It was oh so crispy crunchy with the sugar glaze on top and the cherries were their decadent beautiful selves. Although it was a bit more labor intensive with cherries, it was worth slicing and pitting an entire. It was perfect. Thank you Chef John.

I'm doing this right now. Will text again to the finish..... Well I got it done and it turned out really really great! Mine looks almost exactly like the picture. And the flavor was very good, the crust very flaky and crispy. My only change would be to add some nutmeg and give the peaches a kinda sauce because since there was none made, it turned out somewhat dry. As for the process, I had a hard time with the peaches. They may not have been ripe enough. But then I figured out how to cut around the pit from the top to loosen it and take it out before slicing the peach. That worked great. Other than that, it was exactly as described.

I've made a few of your recipes which turned out well, and love your videos. Unfortunately, this was way too sweet for my tastes. I like the texture of the crust a lot, so I think upping the peaches would work well, or maybe dial back on the sugar in the batter portion to .5 or .66 of what the recipe calls for (that is, if you'd like to taste peach flavor and not just diabetes).

One of the joys of these recipes is just listening to Chef John. I've made this cobble twice but I have this issue with leaving recipes alone. The taste is great and the crust is crispy. I've copied many of Chef John's recipes to a flash drive so I have them at hand when needed and I just send the one I want to my phone. I prepared this dish today for Easter dinner and it was a huge hit. My family is not crazy about dessert but they loved it! My sister even had seconds. I also made Chef John’s BBQ ribs and they came out great! Anyway, the main reason that I want to comment is because I did a few things slightly different that helped me prepare the dish in 10 minutes or less. I used pre-sliced frozen peaches, preheated the oven, used room temp butter, used a potatoes smasher to quickly mix the ingredients together, and a tiny sifter to dust the sugar on top. I skipped the spray part and still got the beautiful crust!

I made this today and it was fantastic! Mind you, I don't have a freakishly small wooden spoon so that probably lessened the quality of the end product. I made a few adjustments. Most minor of which, I had several smallish peaches and nectarines so I used a mixture of both and used 8 pieces of fruit. I also did add a bit more liquid so it poured a little easier and it still turned out just fine with a nice, crispy layer atop the crust. I also decreased the temperature and added more time because I cooked it in my convection toaster oven. This recipe was a huge hit and it's a keeper!

I had to make this. I used can peaches instead. This is simply very delicious and crispy unlike any other cobbler. I will make this cobbler from now own.

the peach separating technique only works for free-stone peaches. With cling-stone peaches you'll end up with a mushy mess

I made this for the fourth of July. It was fantastic. I added a 1/2 tsp of vanilla to the batter. I cut the sugar by a little bit and basically used that to put more of it on top for the glaze. Make sure to cook this on a baking plate or something else to catch the juice. It will bubble up the edges. I had to cook it for 55 minutes in my oven. You want it to get that perfect golden brown and then take it out and let it cool. This would work with any filling strawberries, apples..etc.

I just used this batter with blackberries and it worked great. About 4+ cups of blackberries, two tblsp tapioca and half cup sugar. Vanilla ice cream is not optional.

Would it make a difference if I cook my peaches in spices, with a pie crust on the bottom, top with your recipe? Would I have to cut down on the sugars?
