Hi John! My mom had the BEST Peach Cobbler recipe. Unfortunately, through a series of events, her most prized recipes were lost. She had a biscuit topping, with a sugar crackle glaze. She was so 'ole skool that she even "blanched" the peaches to remove the skin. Yours looks delish, and easier, too. All I would add is a dash of nutmeg and a splash of vanilla to the filling. A variation...make a Peach Melba cobbler, with the addition of freshly picked Raspberries! A little fresh lemon juice and zest, and a little Framboise liqueur! Perfect for the summer...always a pleasure to view your channel! ☺️

Stefan Marchione Check out Chef John’s recipe for peach cobbler on Food Wishes channel. That might be the one you are looking for . The topping is like a soft center, crispy sugar cookie. After spreading the batter on top of the peaches, you sprinkle liberally with sugar spray a bit of water on top.

I don't know if anyone else caught this but if you go to the recipe on your website it states to add 3/4 c of sugar to the topping, however, in this video there is no mention of it. I loved this without the additional sugar. What you use in the peaches is plenty - especially if you use ice cream! This is perfection and still gives me a slight hint of my childhood without the sugar rush! Magnificent!

All these months later, I made this cobbler today. However, I also looked over a few other peach cobbler recipes on KZbin and the “others” did mention the one cup of white sugar to mix with the dry ingredients …1 cup flour, 1 cup sugar, 1 cup milk. Easy to remember. I used s.r. flour. Anyway, I needed your take to see how to cook and sweeten the fresh peaches (as most use canned). I also browned the butter in the pan in the oven. Sprinkled my topping with a bit of cinnamon and sugar before baking. All in all came out delicious. TY. Your video here did help me.

We love this cobbler! After trying several other recipes we finally have a keeper! I think the cobbler dough bakes better by putting the peaches on top of the batter instead of the other way around like in some other recipes. Like John says, don't cover the batter completely so that it can rise up through the peaches. I covered it all up one time and the batter didn't rise through very well, so that was pilot error.

I mill my flour so I used 128g as a measurement for 1 cup flour from soft white wheat and added an extra tablespoon of milk for the liquid, the batter looks runny (freshly milled flour is more thirsty than bagged flour and needs time to absorb the liquid) but it bakes up nicely.
