The restaurant cooks it very carefully. They weigh and cut the pork belly very regularly. After being pan-fried, it is stewed in the restaurant's special sauce. The stewed pork belly is colorful. Bacon is pork belly that has been salted and cured. You know that it has been cut length wise, but in Asian cultures, they usually cut it the other way.
