Crispy Bitter Gourd Fries | Bitter Gourd Chips | Pavakkai Poriyal | Kerepek Peria. Crispy Bitter Gourd Fries - There's a trick to reducing the bitterness and making it tastier. Bitter gourd is a vegetable that is much sought after for its numerous health benefits. However, many people hesitate to eat bitter gourd because of its bitterness. In this recipe, we will learn a vey simple method to cook bitter gourd without the bitterness. The resultant crispy fries or bitter gourd chips go well with rice and other side dishes. I have made a similar recipe previously in 2016. This is the updated version with details and all the tips and tricks. Give it a try, you’ll love it!
Ingredients
2-3 pieces small bitter gourds / pavakkai / peria katak (300g)
4 tbsp chickpea flour (gram dhall flour) - besan
2 tbsp rice flour
2 tbsp corn flour
1 tsp kashmiri red chilli powder
½ tsp turmeric powder
Few drops red colouring (optional)
½ tsp salt (to taste)
Oil for frying
Bahan-Bahan
2-3 biji peria katak (200g)
4 sb tepung kacang kuda
2 sb tepung beras
2 sb tepung jagung
1 sk serbuk cili merah
½ sk serbuk kunyit
½ sk garam (ikut rasa)
Pewarna merah (ikut suka)
Minyak untuk menggoreng
