Famous Restaurant-style Very Tasty and Quick Brinjal and Potato Sambal | Eggplant and Potato in Chilli Paste | Crispy Eggplant and Potato Slices in Dark Sauce | Aubergine and Potato in spicy sauce. This recipe is based on a famous restaurant dish. I added my own tweak to make it vegan and vegetarian. Learn my secret ingredient that takes the taste to another level. It is so tasty with very simple ingredients that are easily available. Potatoes and brinjals are sliced very thinly and then fried in oil to make them crispy. Then a simple sauce made of chilli paste and dark soya sauce adds to the taste of this dish. Try it at home and you’ll be surprised at the simplicity of this dish and the amazing taste. Serve it as a side dish for rice or any breads. Give it a try and leave your comments.
Ingredients
1 long brinjals/eggplants, sliced thinly
2 potatoes, sliced very thinly with slicer/grater/mandolin
1 big onion, sliced thickly
1 tbsp vegetarian ‘anchovies’ - sub with 1 tsp mushroom or vegetable seasoning
1 tamarind slice (asam keping)-can sub with 1 tbsp tamarind juice
2 tbsp coconut palm sugar, chopped
1 tbsp chilli paste - sub with 1-2 tsp red chilli powder
1 tbsp thick soya sauce
¼ tsp salt (as needed)
Oil for frying
