Coconut milk is used a lot in cooking. Coconut milk is very versatile and can be added to curries, gravies, cakes, desserts and even yogurt and cheese. Much of the coconut milk that is used today comes prepared in cartons or cans, which is very convenient for busy people. But this commercial coconut milk is usually filled with stabilisers and preservatives to ensure a long shelf life. Not too long ago, coconut milk was prepared manually from grated or shredded coconut. The coconut had to be split into two, then a home-based grater was used to grate the coconut flesh out. Water was added to this grated coconut to squeeze out coconut milk. Many consumers today are not familiar with the traditional techniques of extracting coconut milk. In this video, I will explain in detail how fresh coconut milk can be extracted from grated/shredded coconut to make fresh coconut milk- minus preservatives, stabilisers and other ingredients. Ingredients
1 cup grated/shredded coconut
1 cup hot water
3 cups plain water (ambient temperature)
Method
Place grated/grated coconut in blender jug.
Add 1 cup hot water and 1 cup plain water to the coconut.
Run the blender at low speed for 2 minutes.
Pour out the coconut into a sieve and squeeze the coconut milk out with your hands. This results in the first coconut milk or thick coconut milk.
Place the grated coconut back into the blender jug.
Pour in 2 cups plain water of slightly warm water.
Run the blender at low speed for 2 minutes.
Pour out the coconut into a sieve and squeeze the coconut milk out with your hands. This results in the second coconut milk or thin coconut milk.
How to use for curries or gravies
When making curries, first use the thin coconut milk to boil all the ingredients until cooked.
When curry is almost done, add the thick coconut milk. Stir bring to a slight boil, then switch off the stove.
Remember not to boil the thick coconut milk too long to get full benefits of coconut milk.
Other uses
Cakes, kuih, desserts - use the thick coconut milk.
Yogurt- use thick coconut milk.
Coconut oil - use thick coconut milk.
