If you add egg, it's more moist than just the cheese. I come from Bulgaria and we have so many variations of this feta cheese pie, which we call banitsa. My favourite is: you crumble the feta with eggs and spread it on the filo sheets. To make them rise more, you can mix plain youghurt with a bit of baking soda and add to the mixture before you roll. Then brush with butter or vegetable oil and, my preference, sprinkle with a bit of sugar before you bake. We make this all the time and every Bulgarian loves it! Mmmm, banitsa! 😊

@kwena7170 baking powder? You can also omit it entirely, but it may not rise properly.

Banitsa!! My favorite 👏 my mom used to add sparkling water on top of the mixture to help it rise I haven’t had success making it myself but love to buy the frozen on from our local Bulgarian store 😊

I will use this as an inspiration. I made Beef Wellington, and I have some leftover puff pastry, so I use it instead. I wanted to just cut it in pieces, and put some sesame on it, but this looks really good.
