spinach leaves shredded - 6 cups
corn starch - 1/2 cup
oil - for deep frying
oil - 2 tbsp
ginger chopped - 3/4 tbsp
garlic chopped -3/4 tbsp
green chilli chopped - 1no
red chilli chopped - 1 no
soya sauce - 4 tbsp
vinegar - 1 tbsp
sesame seeds - 2 tbsp
salt - to taste

Came across this while browsing for something else, but it happens to be a dish that I like a lot. Used to eat that often when I was younger and didn’t have to watch my weight. Would love to make this for old time’s sake though. Topping it with some roasted peanuts along with sesame seeds elevates this dish. There used to be a small Chinese restaurant in Bangalore ages ago which served paneer croquettes on a bed of crackling spinach. Yummy. They shut it down and I haven’t come across that dish in recent times. Thank you chef, for the recipe and the happy memories.
